Ingredients Method

What goes in the bowl

  • 2 small onions diced (1 ½ cups)
  • 1 tablespoons garlic minced
  • 2 teaspoons olive oil
  • 1 tablespoon New Mexican chili powder or ancho
  • 1 tablespoon chili powder
  • 1 tablespoon Paprika
  • 1 teaspoons smoked paprika
  • ½ teaspoons cayenne
  • ½ teaspoons ground cumin
  • 1 pound ground turkey
  • 28 oz crushed pomodoro tomatoes can
  • 6 oz tomato paste
  • 14 oz black beans canned, drained
  • 14 oz pinto beans & liquid canned
  • 14 oz red kidney beans & liquid canned
  • 2 cups chicken stock
  • Kosher salt to taste

How the cooking goes

  1. In a large pot or dutch oven, add the olive oil, garlic and onions. Cook over medium-low heat until the onions are translucent but not browned. Add all the spices and cook for 2 minutes, stirring often to keep them from burning. Add additional oil if desired. The more oil, the less stirring is necessary, but the less healthy. Cook’s choice! This allows the spices to bloom in the oil and heat, amplifying the flavor.
  2. Season the turkey with salt. Add the ground turkey then cook through, chopping it up into medium pieces. You want some nice big chunks!
  3. Add tomatoes, paste, drained black beans, pinto beans and their liquid, kidney beans and their liquid. This canned bean liquid thickens the chili. You can use the black bean liquid too but it will cloud the chili and change the color. [please don’t for the photos].
  4. Add chicken stock. Simmer for at least 30 minute to meld the flavors. Taste for salt, add additional kosher salt as needed.
  5. The longer it simmers, the better it will taste, but for a fast meal, it only takes 30 minutes!

After it comes off the heat

Cool the pot before it goes into the refrigerator. It reheats gently on the stove the next day.
