Ingredients Method

What goes in the bowl

  • 1 lb ground turkey I use 93% lean
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ½ cup Italian seasoning bread crumbs
  • 1 tablespoon parmesan cheese grated
  • 1 ¼ teaspoons kosher salt
  • 1 egg
  • 1 tablespoon canola oil Can be the cooking oil of your choice

How the cooking goes

  1. In a medium bowl combine all ingredients then mix well with your hand or a large spoon.
  2. Spoon or scoop a bit of meatball mixture the size of a golf ball onto a plate or tray. Roll into balls.
  3. Heat the oven to 350°F or heat about 2 quarts of marinara sauce in a large saucepot.
  4. Warm a large nonstick pan, cast iron pan, or stainless steel pan with remaining oil until it is very hot and sizzles when water is flicked on it.
  5. Working in batches to avoid crowding and steaming, add some of the meatballs to the pan spaced about an inch apart. Brown at least 4 of the sizes and move them frequently to keep them from settling.
  6. Set directly in sauce if you are going to finish cooking them on the stovetop or place on a sheet pan and keep it to one side. Repeat with remaining meatballs.
  7. Oven-bake in a preheated oven for 8-10 minutes or until the internal temperature of 165°F or simmer on low until the meatballs are cooked all the way through. This will only take about 10-15 minutes.

After it comes off the heat

Cool the pot before it goes into the refrigerator. It reheats gently on the stove the next day.
