- Heat about an inch of water in a medium saucepot until it is just about simmering. Ensure the bowl of your stand mixer fits perfectly on top, creating a double boiler effect, but importantly, the water should not touch the bottom of the bowl.
- In your stand mixer bowl, whisk together the egg whites and granulated sugar. Place this bowl over the simmering water and continue whisking constantly. Cook the mixture until it reaches 130°F (54°C) on an instant-read thermometer, or until all the sugar has completely dissolved and the mixture feels warm to the touch. At this point, the meringue will also begin to gain a slight volume and feel lighter.
- Carefully remove the bowl from the heat (use a towel as the bowl will be hot, especially with a gas burner!) and attach it to your stand mixer. Fit it with the whisk attachment. Beat the meringue on high speed until it reaches stiff, glossy peaks and cools down significantly. This cooling process is crucial before adding butter.
