Ingredients Method

What goes in the bowl

For the Cookies

  • 1 ¾ cup granulated sugar
  • 1 cup unsalted butter cool but pliable, 2 sticks
  • 2 large eggs
  • 3 tbsp + 1 tsp whole milk
  • 1 teaspoon Vanilla extract
  • 4 cups all purpose flour
  • ½ t baking soda
  • ¾ t cream of tartar
  • ¾ t kosher Salt

For the Cinnamon Sugar

  • ½ cup granulated sugar
  • 2 teaspoons Cinnamon

How the cooking goes

  1. Warm the oven to 325°F convection or 350°F conventional (no fan). Line 2 sheet pans with baking paper.
  2. In a medium bowl whisk together flour, baking soda, cream of tartar, and salt; keep it to one side.
  3. In the bowl of a electric mixer fitted with the paddle attachment or in a mixing bowl with a hand mixer, cream butter and sugar until light and fluffy.
  4. Put eggs one at a time, beating well after each addition. Stop the mixer and scrape down the sides of the bowl and under the bottom to ensure an even creaming.
  5. Add the milk and vanilla and beat to combine.
  6. Reduce mixer speed to low and slowly add dry ingredients in several additions. Add the next portion when the last addition is almost incorporated. After adding all the flour, mix just until just incorporated.
  7. Scoop with a medium cookie scoop or roll about 2T sized bits of dough into balls.
  8. This step is optional but for the best cookies you recommend chilling the dough completely before baking. This will only take about 30 minutes or wrap and chill overnight.
  9. In a small bowl, whisk together the cinnamon and sugar. Roll the chilled dough in the cinnamon sugar and place on sheet pan lined with parchments about 2 inches apart.
  10. Oven-bake in preheated oven about 10 minutes or until puffed and set around the edges. The centers will look matte and no longer shiny.

After it comes off the heat

Cool the sheet on a rack before the pieces are stacked. A covered tin keeps them for a few days.
