How to Make Toffee with a Clear Method is filed under No-bake sweets and built around blanched sliced almonds, light brown sugar firmly packed, and water. Plan on 20 pieces.
Count on 20 minutes of prep, 20 minutes of cooking, about 40 minutes from the first measurement to the plate.
What goes in the bowl
- 2 cups blanched sliced almonds
- 1 ¼ cups light brown sugar firmly packed
- 2 tablespoons water
- ½ cup unsalted butter
- ¼ teaspoon kosher salt
- 1 teaspoon vanilla extract
- ¼ teaspoon baking soda
- 6 oz bittersweet chocolate chopped
How the cooking goes
- Heat the oven to 350°F. Toast almonds, stirring now and then, until a light deep gold. Cool completely.
- Cut almonds by hand or pulse in a food processor until they are chopped fine but not a powder.
- Line a cookie sheet with baking paper or waxed paper. Sprinkle half of the almonds on the cookie sheet. Try to confine to a 7 inch by 10-inch rectangle. Keep it to one side.
- Be sure to have all ingredients measured and ready near the stovetop.
- In a medium, heavy-bottomed saucepot, combine brown sugar, water, butter, and salt. Stir to combine, then turn the heat on medium and heat it until it boils while stirring constantly.
- Continue to boil, stir occasionally, until the mixture reaches 285°F (soft crack stage). Immediately remove the saucepot from the heat, carefully remove the thermometer, then add the vanilla extract and baking soda.
- Pour the hot candy over the almonds on the sheet pan. Immediately scatter the chocolate over the hot toffee. Wait about 5 minutes until the chocolate has melted and spread with an offset metal spatula evenly over the toffee. Sprinkle the remaining half of chopped almonds over the chocolate and allow to cool until it is no longer warm.
- Break into pieces.
After it comes off the heat
Give the plate the rest the method asks for. Cover leftovers and refrigerate them when the dish includes meat, eggs, or dairy.
