2. Prep the squash. Slice zucchini and yellow squash lengthwise into roughly 1/2-inch-thick ribbons. Toss them in a bowl with 1 tablespoon olive oil, 1/4 teaspoon kosher salt and 1/4 teaspoon black pepper so each piece is lightly coated.

3. Grill the squash. Place the slices on the hot grill or grill pan and cook about 2–3 minutes per side, until you see grill marks and the flesh is tender but still holds its shape.

Instructions
