What goes in the bowl
- 3 1/2 cups all-purpose flour
- 5 tablespoons cocoa powder Dutch-processed
- 2 teaspoons kosher salt
- ½ teaspoon baking powder
- 8 oz dark chocolate melted and cooled
- 1½ cups light brown sugar packed
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter cold but pliable
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups chocolate chips
- Maldon salt optional, for finishing
How the cooking goes
- Combine the flour, cocoa powder, baking powder, and kosher salt together into a bowl or onto a sheet of parchment. Keep it to one side.
- Warm the chocolate in a microwave-safe bowl. Stir after each 15-second interval. Continue until the chocolate is fully melted.
- In a electric mixer fitted with the paddle attachment, cream the butter with the brown sugar and granulated sugar until the mix just comes together. Do not overcream.
- Put the eggs one at a time, beating after each addition.
- Put the vanilla extract and mix to combine.
- Tip in the melted, cooled dark chocolate and beat until incorporated.
- Add the dry ingredients and mix on low until the flour just disappears, then fold through the chocolate chips.
- Portion the dough with a large cookie scoop onto a lined sheet pan and flatten slightly. Sprinkle with Maldon salt if using.
- Chill the scooped dough for at least 30 minutes, or refrigerate the dough tightly wrapped for up to one week, or freeze for up to two months.
- Oven-bake at 350°F conventional for 7 to 8 minutes, until the edges are set and the tops are fully matte with small cracks across the surface. The centers will look slightly underdone. Allow it to cool on the pan.
After it comes off the heat
Cool the sheet on a rack before the pieces are stacked. A covered tin keeps them for a few days.
