Ingredients Method

What goes in the bowl

  • 2 ¼ cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher or sea salt
  • ½ cup unsalted butter softened
  • ¼ cup full-fat block cream cheese softened
  • ¾ cup light brown sugar packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup bittersweet chocolate chips

How the cooking goes

  1. Whisk together the flour, cornstarch, baking soda, and salt in a medium mixing bowl. Keep it to one side.
  2. In a electric mixer fitted with the paddle attachment, beat the butter and cream cheese on medium speed just until a smooth paste forms. Do not aerate. Add the brown sugar, granulated sugar, egg, and vanilla, and beat on medium-high speed until the mix looks even and slightly lightened.
  3. Reduce speed to low then add the flour mixture in 5 to 7 small additions, mixing each just until incorporated.
  4. Add the chocolate chips then mix briefly to distribute evenly. Reserve a small handful to press onto the tops of the dough balls before baking.
  5. Portion the dough into 2-inch balls using a cookie scoop or ¼-cup measure. Refrigerate at least 30 minutes, up to 3 days, or freeze for up to 3 months.
  6. Warm the oven to 350°F. Line sheet pans with baking paper and place dough balls 2 inches apart. Press a few reserved chocolate chips onto the top of each ball.
  7. Bake 11 to 12 minutes, until the edges just begin to show color. Cool 5 minutes on the pan before transferring to a wire rack.

After it comes off the heat

Cool the sheet on a rack before the pieces are stacked. A covered tin keeps them for a few days.
