Ingredients Method

What goes in the bowl

Crust

  • 250 g Oreo Crumbs or any other chocolate cookie
  • 50 g Butter melted

Cheesecake Filling

  • 800 g Cream cheese I use Philadelphia because it has given me the best results.
  • 4 g Vanilla
  • ½ Vanilla bean pod split and scraped (seeds only), optional
  • 240 g Sugar
  • 134 g Whole eggs
  • 20 g Yolk
  • 143 g Sour cream
  • 143 g Heavy cream
  • 255 g Mini chocolate chips ¾ cup
  • 2 t AP Flour

How the cooking goes

  1. Heat the oven to 325°F (you did convection because you did not want that direct heat on the top of the cheesecake).
  2. Prepare the Crust:.
  3. Line the bottom of a springform pan with aluminum foil for easy release and extra insurance against water entry! Combine all ingredients for the crust and press into the bottom of the foil lined springform pan.
  4. Oven-bake in preheated oven for 8-10 minutes. You want the crust to look matte and smell fragrent. Cool at least 10 minutes or until the sides are no longer hot. Warm is fine.
  5. Wrap the outside of the pan with aluminum foil, rolling the top edges outwards so as not to direct water into the lining.
  6. Prepare the filling:.
  7. Whip the cream cheese in the bowl of a electric mixer fitted with the paddle attachment until silky, creamy and smooth.
  8. Put the sugar and beat until no granules are visible. The filling will look shiny and silky.
  9. Add the vanilla extract and seeds and beat until incorporated.
  10. Put the eggs one at a time a beat 1 minute after each addition. Yes, an actual minute.
  11. Add the sour cream and cream and beat to combine.
  12. Put the flour to the bowl of chocolate chips, toss to coat. Add to batter and fold through.
  13. Tip into prepared crust and bake in a water bath halfway up the sides of the pan. Bake approximately 1 hour and 30- 40 minutes or until set but still wobbly.
