What goes in the bowl
- ½ cup coconut oil melted and a little warm
- ¾ cup dark brown sugar packed
- ¼ cup granulated sugar
- 1 cup unsweetened applesauce Store bought or homemade
- ¼ cup low fat buttermilk
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon kosher salt
- 2½ teaspoons ground cinnamon
- ½ teaspoon ground ginger
How the cooking goes
- Warm the oven to 350°F conventional. Spray a standard 9×5 inch loaf pan with nonstick cooking spray.
- In a mixing bowl, whisk together the dark brown sugar, applesauce, buttermilk, eggs, and vanilla extract until the texture looks smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and ground ginger. Pour the dry ingredients into the wet and whisk gently until the mix just comes together.
- Put the warm melted coconut oil and whisk to incorporate completely. The batter should look smooth and emulsified. Work quickly to avoid overmixing.
- Pour the batter into the prepared loaf pan and spread evenly.
- Oven-bake for 55 to 60 minutes, until a cake tester comes out with a few moist crumbs and the center springs back lightly when touched. Do not rotate the pan during the first 45 minutes. Start checking at 55 minutes.
- Cool in the pan for 10 minutes, then turn out onto a wire rack and cool until it is no longer warm before slicing.
After it comes off the heat
Wait until the loaf is cool before slicing. Wrap it at room temperature, and freeze slices you will not eat in a couple of days.
