A Symphony of Flavors and Textures

These Ginger Orange Almond Biscotti are more than just cookies; they are a delightful fusion of bold and delicate. Each bite delivers a sophisticated profile, a testament to the careful balance of high-quality ingredients. The candied orange peel contributes a delicate sweetness and a vibrant citrus aroma that instantly brightens the palate. This sweetness is perfectly counterbalanced by the candied ginger, which introduces a gentle warmth and a subtle, invigorating bite, awakening the senses. Complementing these primary flavors are the rich, earthy notes of cinnamon and the exotic, slightly peppery warmth of cardamom, adding layers of comforting spice.

But the experience doesn’t end with flavor. The inclusion of lightly toasted almonds provides an extra layer of delightful crunch, enhancing the signature texture of these magnificent biscotti. This interplay of chewy candied fruits, crisp almonds, and the firm, snappy structure of the twice-baked cookie creates an incredibly satisfying mouthfeel. Every element works in harmony, ensuring a memorable and utterly irresistible treat.

20 Cookies

Ingredients

  • 230 g All purpose flour
  • 170 g sugar
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • 1 teaspoon cardamom
  • 60 g Butter cold
  • 115 g almonds blanched and slivered, lightly toasted
  • 1/3 cup candied orange peel diced, recipe here
  • ½ cup candied ginger diced
  • 1 teaspoon vanilla
  • 1 egg
  • 44 g whole milk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, sugar, baking powder, cinnamon, and cardamom; mix well until blended.
  3. Add the cold butter to the bowl and mix until the mixture is very fine and powdery, with no visible signs of butter remaining.
  4. Stir in the almonds, diced orange peel, and diced ginger until evenly distributed.
  5. In a separate bowl, whisk together the egg, vanilla extract, and whole milk until thoroughly combined.
  6. With the mixer running on low speed, slowly pour the egg mixture into the flour mixture. Mix just until the dough comes together and forms a cohesive mass.
  7. Turn the dough out onto a lightly floured surface and knead gently until the dough is uniform and smooth.
  8. Divide the dough into two equal pieces and roll each into a log approximately 12 inches (30 cm) long. Lightly coat the logs with flour to prevent sticking. Carefully transfer the dough logs onto a parchment-lined baking sheet and bake for 15-20 minutes in the preheated oven, or until golden brown and firm to the touch.
  9. Remove the logs from the oven and allow them to cool slightly on the baking sheet.
  10. Reduce oven temperature to 300°F (150°C).
  11. Once the logs are cool enough to handle, use a sharp serrated knife to cut them into ½ inch (1.25 cm) diagonal slices.
  12. Place the sliced biscotti onto the parchment-lined baking sheet, cut side down, and bake for an additional 15 minutes, or until crisp and dry. Cool completely on the pan before storing.
  13. Store your finished biscotti in an airtight container at room temperature for several weeks, or freeze for up to two months for longer preservation.

Tips for Perfect Biscotti Every Time

  • Don’t Overmix the Dough: Overmixing can lead to tough biscotti. Mix just until the ingredients are combined and the dough comes together.
  • Achieve the Right Log Shape: Ensure your dough logs are uniform in thickness and length for even baking. A slightly flattened log will yield wider biscotti, while a rounder one will result in taller, more slender pieces.
  • Cool Slightly Before Slicing: Allowing the baked logs to cool for 10-15 minutes makes them easier to slice without crumbling. The warm dough is more pliable but still firm enough to cut cleanly.
  • Use a Serrated Knife: A good serrated knife is crucial for cleanly slicing the biscotti logs. This prevents crushing and ensures neat, even cuts.
  • Control the Second Bake: The second bake is where the biscotti gets its characteristic crispness. Keep a close eye on them; bake until they are golden brown and thoroughly dried out. If you prefer a chewier biscotti, reduce the second baking time slightly.

Why Biscotti Make the Ultimate Holiday Gift

Biscotti are more than just a delicious treat; they’re an excellent choice for homemade holiday gifts. Their sturdy nature means they travel well and have a long shelf life, making them ideal for shipping to loved ones or presenting in festive gift baskets. Package them in decorative tins or clear bags tied with ribbon for a thoughtful and impressive present. The unique combination of ginger, orange, and almond evokes the cozy, celebratory spirit of the season, making them a welcome gift for friends, family, and colleagues alike.

Storage and Shelf Life

Proper storage is key to maintaining the delightful crispness of your Ginger Orange Almond Biscotti. Once completely cooled, store them in an airtight container at room temperature. They will remain fresh and crisp for up to two to three weeks. For longer storage, biscotti freeze exceptionally well. Simply place them in a freezer-safe airtight container or bag, and they will keep for up to two months. When ready to enjoy, simply thaw them at room temperature; a quick toast in a warm oven can help restore any lost crispness.
