  • In a small saucepan, combine all the ingredients for the peach compote (diced peaches, lemon zest, lemon juice, sugar, and a dash of cinnamon). Set over medium heat and bring to a boil, stirring occasionally. Reduce the heat to low and let it simmer for 30-40 minutes, or until the peaches are tender and the sauce has thickened. For a quicker thickener, you can add ½ teaspoon of cornstarch mixed with 2 tablespoons of water, stir it into the compote, and cook for an additional 10 minutes. Allow the compote to cool completely before using.

Make your Crisp topping:

  • In a medium bowl, combine all the ingredients for the crisp topping (melted unsalted butter, rolled oats, light brown sugar, all-purpose flour, and a dash of cinnamon). Stir until the melted butter has thoroughly coated all the dry ingredients. The mixture should be crumbly, but not dry. If it seems a little dry, add a tiny bit more melted butter; be careful not to add too much, as this can make the topping greasy. Taste test for deliciousness!

Make your cupcakes:

  • Bake in the preheated oven for 15-20 minutes. I always recommend checking for doneness starting around 12 minutes, as oven temperatures can vary and no one enjoys a dry cupcake!
