Ingredients

For the Salad

  • 3 zucchini, cut lengthwise into ¼-inch-thick slices
  • 3 ears fresh corn, husked
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 pint cherry tomatoes, halved
  • 3 scallions, thinly sliced
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

For the Garlic Vinaigrette

  • 2 garlic cloves, minced
  • 1 tablespoon whole grain mustard
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 tablespoons white wine vinegar
  • ¼ cup extra virgin olive oil

Instructions

  1. Preheat a gas or charcoal grill to medium-high heat.
  2. Drizzle the zucchini slices and ears of corn with 1 tablespoon of olive oil, then season generously with ½ teaspoon of kosher salt and ¼ teaspoon of black pepper.
  3. Place the seasoned zucchini and corn on the preheated grill. Grill zucchini for about 3-4 minutes per side until tender with visible grill marks. Grill the corn, turning occasionally, for 5-7 minutes until lightly charred and tender. Remove from grill and let cool slightly.
  4. Once cool enough to handle, dice the grilled zucchini into bite-sized pieces. Carefully slice the grilled corn kernels off the cobs. Transfer both to a large mixing bowl.
  5. In a small bowl, prepare the vinaigrette: whisk together the minced garlic, whole grain mustard, ½ teaspoon kosher salt, ¼ teaspoon black pepper, and white wine vinegar. Slowly stream in the ¼ cup of olive oil while whisking constantly until the dressing is well combined and emulsified.
  6. Add the halved cherry tomatoes, thinly sliced scallions, grated Parmesan, and chopped parsley to the bowl with the grilled vegetables. Pour the prepared vinaigrette over the salad and toss gently to ensure all ingredients are thoroughly coated. Serve immediately or let flavors meld for a short period before serving.

  • Feel free to use yellow squash instead of zucchini, or a delightful mix of both for added color and subtle flavor variation.
  • If grilling isn’t an option, you can roast the zucchini and corn in the oven. Dice raw zucchini and slice corn kernels off the cobs. Toss with olive oil, salt, and pepper. Spread in a single layer across two sheet pans. Roast at 400°F (200°C) for 25-30 minutes, or until tender and lightly browned. You can also roast the halved tomatoes for an intensified flavor; arrange them cut-side up on the pans.
  • For optimal freshness, store leftovers in an airtight container in the refrigerator for up to 2 days. The zucchini will naturally soften over time. To help preserve its texture, consider draining any excess vinaigrette and juices and storing them separately in a small jar; drizzle back over the salad just before serving.
