I’m not particular about specific brands, often choosing based on availability and price, as they are consistently a budget-friendly pantry ingredient. Stocking up with a multi-pack when it’s a better deal is always a smart move, as I know they will always be put to good use in my kitchen.

You’ll notice in some of my recipes, particularly for dishes requiring a super smooth texture, I recommend removing the chickpea skins. This step is absolutely essential when making truly silky hummus, as the skins can introduce a slightly grainy texture. While for other recipes like salads or pasta dishes, it’s more about aesthetic appeal, achieving that perfectly smooth result is often worth the extra effort.
The good news is that removing chickpea skins is surprisingly simple. When you rinse canned chickpeas thoroughly and pat them dry with a clean towel, many of the skins will naturally loosen and detach themselves. For the remaining skins, you can easily slip them off with minimal effort. It’s a small extra step that can significantly enhance the texture and presentation of your chickpea dishes, particularly for recipes where smoothness is key.

Once frozen, transfer the chickpeas to an airtight freezer-safe bag or container. They will maintain their quality for up to 3 months. When ready to use, thaw them overnight in the fridge or rinse them with cold water. You can even add frozen chickpeas directly to simmering soups and stews without prior thawing.
Cooking dried chickpeas requires a bit more time but offers a wonderfully fresh flavor and texture. Begin by soaking them overnight in plenty of cold water. The next day, drain and rinse the soaked chickpeas. Place them in a large pot and cover with fresh water (about 2-3 inches above the chickpeas). Bring to a boil, then reduce heat and simmer for 60-90 minutes, or until they reach your desired tenderness.
For a faster cooking method, use an Instant Pot. Even with an Instant Pot, soaking them overnight is highly recommended for best results. After soaking, drain and rinse. Combine 1 cup of soaked chickpeas with 2 cups of fresh water in the Instant Pot. Cook on high pressure for 15-18 minutes, depending on how soft you prefer them. Allow for natural pressure release for best texture.
