- Preheat Oven & Roast Mushrooms: Preheat your oven to 450°F (230°C). - Add Asparagus & Finish Roasting: Remove the baking sheet from the oven. Add the 1-inch asparagus pieces to the pan and gently toss with the partially roasted mushrooms. Spread everything back into a single layer. Return to the oven and continue roasting for another 5-6 minutes, or until the mushrooms are deeply browned and slightly crisp at the edges, and the asparagus is vibrant green and tender-crisp.
- Cook the Barley: While the vegetables roast, combine 1 cup of pearl barley and 3 cups of water (or broth) in a medium saucepan. Bring to a boil, then reduce the heat to a simmer, cover, and cook for about 12 minutes, or until the barley is tender yet chewy. Remove from heat, let stand covered for 2-3 minutes, then fluff with a fork. Drain any excess water and transfer the cooked barley to a large mixing bowl.
- Prepare the Vinaigrette: Squeeze the softened, roasted garlic clove out of its skin into a small bowl.
