Stir in the diced sweet potatoes, rinsed and drained black beans, rinsed and drained sweet corn, fire-roasted crushed tomatoes, and low-sodium vegetable broth. Bring the mixture to a gentle boil. Reduce the heat to low, cover the pot partially, and simmer for 25-30 minutes, or until the sweet potatoes are tender and the chili has thickened to your desired consistency. Stir occasionally.
