Ingredients

  • 2 large yellow onions, coarsely chopped
  • 6 cloves garlic, minced
  • 3 tablespoons olive oil
  • 3 medium carrots, diced
  • 1 parsnip, peeled and medium diced
  • 2 teaspoons fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon fresh oregano, chopped
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 pound hot Italian pork sausage (or mild/sweet Italian sausage)
  • 1 cup dry white wine (e.g., Chardonnay or Sauvignon Blanc)
  • 1.75 quarts brown chicken stock
  • 4-inch rind from a piece of Parmesan cheese (approx. 1 inch thick)
  • 4 small Yukon Gold potatoes, cleaned and medium diced
  • 8 stalks of Tuscan kale (Lacinato kale), ribs removed and cut into ¼ inch ribbons
  • 2 cups cooked gemelli pasta (or other short pasta shape)

Instructions

  • 1. Prepare Aromatics: In a large Dutch oven or soup pot, heat olive oil over medium heat until shimmering. Add coarsely chopped onions and cook for 5-7 minutes until soft and translucent, releasing their juices.
  • 2. Add Garlic: Stir in minced garlic and sauté for 2 minutes until fragrant, being careful not to burn it.
  • 3. Sweat Vegetables: Add diced carrots, parsnips, fresh thyme, rosemary, oregano, and a pinch of salt and pepper. Continue to cook for 7-10 minutes until vegetables soften, without browning.
  • 4. Brown Sausage: Push vegetables to the sides of the pot. Add hot Italian pork sausage to the center and brown, breaking it into larger pieces as it cooks. Ensure it’s thoroughly cooked and slightly caramelized. (Optional: brown sausage in a separate pan and drain fat before adding).
  • 5. Deglaze: Pour in dry white wine. Bring to a boil for a few minutes, scraping up any browned bits from the bottom of the pot, allowing the alcohol to cook off and flavors to concentrate.
  • 6. Simmer Soup: Add chicken stock, Parmesan rind, and diced Yukon potatoes. Stir well. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until vegetables and potatoes are very soft. Remove Parmesan rind before serving.
  • 7. Serve: Ladle hot soup into bowls. Add a small handful of fresh kale ribbons and separately cooked pasta to each bowl, stirring to combine. Serve immediately with crusty bread and a sprinkle of fresh Parmesan, if desired.
