  • 2 Honeycrisp apples or Pink Lady apples, diced
  • ¼ cup finely chopped red onions
  • ¼ cup chopped pecans
  • cup pumpkin seeds (pepitas)
  • ¼ cup dried cranberries
  • ¼ cup crumbled goat cheese
  • 1-2 cups cornbread croutons

Instructions

  • On a large sheet pan, toss the diced butternut squash with 1 tablespoon of olive oil, ½ teaspoon of kosher salt, and ¼ teaspoon of black pepper. Spread it in a single layer to ensure even roasting. Roast for 25-30 minutes, until the squash is tender and lightly browned at the edges.
  • For the vinaigrette, in a small bowl, whisk together the minced garlic, 1 tablespoon of whole grain mustard, ½ teaspoon of kosher salt, ¼ teaspoon of black pepper, and 1 tablespoon of apple cider vinegar.
