Why You’ll Love This Recipe: Ultimate Comfort Food

Barbecue holds a special place in my heart – it’s a dish I can enjoy year-round, regardless of the season. There’s nothing quite like layering succulent pulled barbecue chicken into a soft bun or piling it generously onto a plate. Imagine it alongside creamy white cheddar mac and cheese and a vibrant, tangy healthy creamy coleslaw. Add in a batch of my classic deviled eggs, and you’ve got yourself an instant party feast!

While I sometimes enjoy heartier sides like sweet maple baked beans or a refreshing collard greens salad, for me, coleslaw is an absolute must-have. That delightful crunch and tangy flavor are essential to cut through the richness of the barbecue meat, creating a perfectly balanced bite. This recipe includes a fantastic sweet coleslaw, but it also pairs beautifully with my healthy broccoli slaw or another favorite, the healthy creamy coleslaw, which gets its delicious tang from Greek yogurt. For even more inspiration, explore these incredible sides for pulled pork sandwiches, featuring everything from traditional accompaniments to unique twists like smoked mac and cheese.

Exciting Variations & Serving Suggestions

This slow cooker barbecue chicken recipe is wonderfully versatile, offering numerous ways to customize it to your taste or dietary preferences. Whether you’re looking to switch up the protein, adjust the flavor profile of the sauce, or find new ways to serve it, these variations will inspire your culinary creativity.

  • Pulled BBQ Pork Perfection: For a hearty alternative, easily transform this into a succulent pulled pork dish. Simply use a pork butt instead of chicken breasts. Pork butt benefits from a longer cooking time to achieve that melt-in-your-mouth tenderness, so I recommend cooking it on LOW for approximately 6 hours. This ensures the meat breaks down beautifully, soaking up all the delicious barbecue sauce.
  • Elevate Your Sauce Game: The homemade barbecue sauce included in this recipe is truly delicious with its perfect balance of tang and sweetness. However, feel free to experiment with different flavor profiles! Consider trying the vibrant chipotle maple BBQ sauce from these baked BBQ chicken breasts if you’re craving a smoky, spicy kick with a hint of sweetness. Or, for those who enjoy more heat, explore other homemade BBQ sauce recipes that offer a bolder spice level.
  • Choose Your Chicken Cut: While boneless, skinless chicken breasts are ideal for shredding, don’t hesitate to use other cuts. A mix of breasts and chicken thighs will add even more richness and moisture to the dish. You could even use a whole chicken cut into pieces for a truly economical and flavorful option. If you’re new to deboning, my helpful video on deboning a whole chicken will guide you through the process step-by-step.
  • Healthier Slaw Options: As I always say, coleslaw is non-negotiable with barbecue! But you can certainly make it a healthier accompaniment. My healthy creamy slaw, made with Greek yogurt, is a fantastic option that provides that essential tang and crunch without extra calories. It’s the delightful slaw often pictured alongside my slow cooker barbecue pulled chicken sandwiches.
  • Bake Your Own Buns for Ultimate Flavor: While store-bought buns are convenient, if you have the time, baking your own makes an incredible difference. These Brioche Hamburger Buns are incredibly soft, slightly sweet, and unbelievably tender – they are absolutely worth the extra effort and will elevate your pulled chicken sandwiches to gourmet status.
  • Create a Southern BBQ Plate: Transform your pulled chicken into a complete Southern-inspired meal. Serve it alongside slices of warm, fluffy sweet cornbread or a savory savory southern cornbread. Complete the experience with classic fixings like a bubbling baked mac and cheese, or for a holiday twist, a comforting southern cornbread dressing. The possibilities are endless for creating a truly memorable barbecue spread.

Key Ingredients for Success

Crafting the perfect slow cooker barbecue pulled chicken starts with understanding your ingredients. Each component plays a crucial role in developing the deep, rich flavors and tender texture that make this dish so irresistible.

  • The Perfect Barbecue Sauce: The heart of this recipe is its delicious, tangy, and subtly sweet homemade barbecue sauce. While I highly recommend trying our scratch-made version for its superior flavor, you can certainly use your favorite store-bought BBQ sauce for convenience. If opting for a bottled sauce, consider thinning it slightly with a touch of water or broth to ensure it generously coats the chicken and prevents burning during the long cooking process. For a different flavor profile, you might also enjoy the easy barbecue sauce from this quick BBQ chicken recipe.
  • Choosing Your Chicken: For the most efficient shredding and best absorption of flavor, boneless, skinless chicken breasts are truly the ideal choice for this slow cooker recipe. Bones can unnecessarily extend the cooking time, and chicken skin, while flavorful, will prevent the rich barbecue sauce and seasonings from fully penetrating the meat. If you do use bone-in or skin-on chicken, simply remember to check for doneness more carefully and remove the skin after cooking for that perfect pulled texture. Achieving Perfectly Moist Slow Cooker Barbecue Chicken

The beauty of slow cooking is its ability to transform simple ingredients into something extraordinary with minimal effort. Follow these tips to ensure your barbecue pulled chicken is always incredibly moist, tender, and packed with flavor.

  • Mastering the Cooking Time: This slow cooker barbecue pulled chicken recipe offers flexibility with cooking times. You can cook it on either low or high heat, but for the absolute most tender chicken, I highly recommend opting for the longer, slower cook on LOW. This allows the connective tissues in the chicken to break down gradually, resulting in a supremely tender and juicy texture. However, if you’re short on time, don’t worry! I’ve made this recipe on high heat for the video, and the results were still incredibly moist and delicious, proving it’s a fantastic option in a pinch.
  • Selecting (or Making) the Right Sauce: The right sauce is paramount for moist pulled chicken. While a good quality store-bought BBQ sauce or an easy homemade BBQ sauce can work wonders, a key tip is to thin it out slightly with a little water or chicken broth before cooking. This ensures the sauce has enough liquid to prevent burning during the long cooking process and allows it to completely envelop the chicken, keeping it moist. The homemade sauce in this recipe, particularly with the thinly sliced onions, is especially delightful as the onions slow-cook and blend seamlessly with the pulled chicken, adding layers of savory depth.
  • Ensure Full Chicken Coverage: To truly lock in moisture and maximize flavor absorption, make sure every part of your chicken breasts is generously smothered in the barbecue sauce. Pour the sauce over the chicken, then use a spoon to ensure some sauce gets underneath the chicken pieces as well. This complete coverage acts as a protective layer, trapping moisture and allowing the chicken to braise in the flavorful sauce for hours, resulting in unparalleled tenderness.
  • Shredding While Hot: The timing of shredding can impact the final texture of your pulled chicken. For the easiest and most effective shredding, remove the chicken from the slow cooker while it’s still hot. Using two forks – one to hold the chicken steady and the other to pull and shred – the meat will practically fall apart. Shredding it hot also allows some steam to escape, preventing the chicken from becoming overcooked or mushy as it cools. For an extra boost of moisture and flavor, toss the shredded chicken back into some of the reserved sauce before serving.

Chef Lindsey’s Expert Tip

For this ultimate slow cooker barbecue pulled chicken, boneless, skinless chicken breasts truly are your best friend. While other cuts can work, sticking to boneless and skinless poultry ensures the most tender, flavorful, and shreddable result. The absence of bones means faster, more even cooking without unnecessary obstructions. More importantly, removing the skin allows the rich, savory barbecue sauce and all those wonderful seasonings to fully penetrate the meat, infusing every fiber with deep flavor. Plus, it saves you the extra step of having to remove bones and skin after cooking, making for a truly effortless and perfect pulled BBQ experience!

Ingredients

For the Barbeque Chicken:

  • ¼ cup cider vinegar
  • ½ cup water
  • 2 tablespoons yellow mustard
  • ½ teaspoon pepper
  • 1 ½ teaspoon salt
  • ¼ teaspoon cayenne pepper rounded
  • 1 lemon slice
  • 1 white onion or yellow onion
  • ¼ cup butter
  • ½ cup ketchup
  • 2 tablespoons Worcestershire sauce

For the Sweet Coleslaw:

  • 1 16 oz bag coleslaw mix* or you can shred your own cabbage (½ head + 1 carrot)
  • 2 tablespoons diced onion
  • cup Light Mayonnaise or Miracle whip
  • 2 tablespoons vegetable oil
  • ½ cup white sugar
  • 1 tablespoon white vinegar or rice vinegar
  • ¼ teaspoon kosher salt
  • 1 teaspoon poppy seeds

Instructions

Make the sauce:

  • Begin by preparing your onion. Peel it and slice it in half from the root to the tip. Then, thinly slice it vertically (again, from root to tip, rather than across the middle). This method helps the onion soften and meld into the sauce beautifully during cooking.
  • In a medium saucepan, combine the cider vinegar, water, granulated sugar, yellow mustard, black pepper, salt, a rounded ¼ teaspoon of cayenne pepper for a subtle kick, the lemon slice, thinly sliced onion, and butter.
  • Bring the mixture to a gentle simmer over medium heat. Allow it to simmer, uncovered, for about 20 minutes. This simmering time allows the flavors to meld and the onions to soften. After 20 minutes, carefully remove and discard the lemon slice.
  • Next, stir in the ketchup and Worcestershire sauce. Bring the sauce back to a boil, then reduce the heat to low and let it simmer for another 5 minutes, ensuring all ingredients are well combined and flavors are fully developed.
  • While you could traditionally puree the sauce until the onions are fully incorporated for a smoother texture, I highly recommend leaving them as is for this particular recipe. The slow-cooked, tender onions add an incredible depth of flavor and a delightful texture that perfectly complements the pulled chicken.

Make the chicken:

  • Place 2 to 4 boneless, skinless chicken breasts in your slow cooker. If you desire a very saucy pulled chicken, consider doubling the homemade barbecue sauce recipe for 4 breasts. Pour all of the prepared barbecue sauce evenly over the chicken, making sure each piece is well coated. Cook on LOW for 6 hours for the most tender results, or if you’re in a hurry, cook on HIGH for 3 hours. Both methods yield incredibly moist chicken, but the longer, slower cook on low really makes a difference in tenderness.
  • Once cooked, carefully remove the chicken breasts from the slow cooker and transfer them to a sturdy cutting board. Using two forks, shred the chicken while it’s still hot. Hold one end of the chicken breast with one fork to stabilize it, and use the other fork to scrape and pull the meat apart until it’s all finely shredded. This process is much easier when the chicken is warm and fresh from the slow cooker.
  • Transfer the shredded chicken to a serving dish. Pour some of the delicious reserved sauce from the slow cooker over the pulled chicken to keep it moist and enhance its flavor. Cover the dish with aluminum foil to keep the chicken warm until you’re ready to serve.

Make the Coleslaw:

  • In a medium bowl, whisk together the mayonnaise (or Miracle Whip), vegetable oil, white sugar, white vinegar (or rice vinegar), kosher salt, and poppy seeds until thoroughly combined and smooth. Add the coleslaw mix (and optional broccoli slaw mix) to the bowl. Toss everything together until the cabbage and carrots are completely coated in the dressing. For the best flavor and crunch, it is crucial to chill the coleslaw in the refrigerator for at least 2 hours before serving. I once tried to serve it after only 30 minutes, and the flavors hadn’t fully developed – it’s a step you don’t want to skip!
  • With a little bit of prep work done earlier in the day, your entire delicious barbecue pulled chicken dinner with fresh coleslaw can be assembled and ready to enjoy in a matter of minutes when dinnertime rolls around. It’s the ultimate easy meal prep!
