Discovering Millet: An Ancient Grain for Modern Palates
While quinoa has rightfully earned its place as a beloved superfood, it’s time to introduce your palate to another remarkable ancient grain: millet. Far from a passing fad, millet boasts a history stretching back to the pre-Neolithic era, making it one of the earliest cultivated grains known to humankind. Its slightly nutty, subtly sweet flavor profile and delicate texture offer a delightful alternative to more common grains, bringing a unique character to any dish.
Beyond its ancient roots and delightful taste, millet offers significant health benefits. It’s naturally gluten-free, making it an excellent choice for those with celiac disease or gluten sensitivities. Rich in fiber, magnesium, and phosphorus, millet supports digestive health, bone strength, and energy production. Incorporating it into your diet is a simple yet impactful way to boost your nutritional intake.
My first memorable encounter with millet was courtesy of my boyfriend, who prepared an elaborate meal featuring this grain for my grandparents, inspired by techniques he learned at a renowned restaurant. While that method was intricate, I’ve simplified the preparation for everyday home cooking, ensuring you can enjoy its wholesome goodness without the gourmet fuss. This Cherry Burrata Millet Grain Bowl showcases millet’s versatility and how it can be the perfect canvas for a symphony of fresh ingredients.

The Harmony of Flavors: Why This Bowl Shines
What makes this particular grain bowl so irresistible? It’s the thoughtful layering of diverse textures and tastes that creates a truly harmonious experience in every bite. The foundation of nutty millet provides a comforting base. This is beautifully complemented by the subtle sweetness and crunch of grilled corn, which picks up a lovely char. The red onions are transformed through grilling, becoming tender and slightly caramelized, while the charred shallots in the vinaigrette add a depth of savory sweetness.
The fresh cherries are not just a garnish; they are a star, providing bursts of juicy, sweet-tart flavor that cut through the richness of the other ingredients. And then there’s the star of the show: the creamy, luscious Burrata. Its delicate, milky interior and slightly firmer outer shell melt beautifully into the warm ingredients, offering a luxurious contrast that ties everything together. The final touch, a bright and tangy cherry vinaigrette, brings an invigorating zing, elevating the entire dish to a gourmet level.

Burrata Brilliance: A Cheese Obsession
Is there anything more divine than Burrata? I could honestly eat it every single day. Its allure lies in its unique combination of textures and flavors – a delicate outer shell of mozzarella encasing a creamy, milky interior of stracciatella (shreds of mozzarella soaked in cream). It’s slightly salty, subtly sweet, and incredibly rich. It’s simply everything you could want in a fresh cheese, offering a sublime counterpoint to the vibrant, fresh ingredients in this bowl.
If Burrata is challenging to find in your area, a high-quality fresh ricotta can make a suitable substitute. Look for artisan brands that offer a truly creamy and flavorful ricotta, not the grainy variety often found in larger supermarkets. However, if you’re ever in New York City, a pilgrimage to Di Palo’s in Little Italy for their fresh Burrata is an absolute must – it’s nothing short of divine.

The Versatility of a Grain Bowl: Two Meals, Minimal Effort
One of the many joys of this Cherry Burrata Millet Grain Bowl is its incredible versatility and how effortlessly it transitions from one meal to the next. The beauty of a well-composed grain bowl is that its components can often be repurposed for a completely different yet equally delicious dish. The night after enjoying this masterpiece, I transformed the cold leftovers into a spectacular salad. Piled high on a bed of fresh mixed greens, with some leftover steak for extra protein, it became a vibrant and satisfying lunch. This simple trick allows for two distinct, flavorful meals with very little additional work, proving that healthy eating can also be convenient and exciting.

- 2 cobs yellow sweet corn
- ½ cup cherries pitted, halved
- ½ cup cilantro chopped
- Kosher salt
- pepper
- ancho chili powder
- New Mexico Chili powder
- 1 Ball Burrata (or high-quality ricotta)
For the Cherry Balsamic Dressing:
- ¾ cup white balsamic vinegar
- ¾ cup safflower oil or another neutral oil
- 2 shallots sliced into rings and grilled
- 2 tablespoons honey
- 1 tablespoon light brown sugar
- ½ cup cherries pitted
- Kosher Salt
- Pepper
Instructions
Make the Grain Bowl:
-
Bring stock or water to a boil in a small saucepot with a large pinch of salt and 1 tablespoon butter. Add millet to boiling water, reduce heat to a simmer, cover, and simmer until all liquid is absorbed or the grains have popped open and are tender. Remove from heat to cool and begin to dry out. You can pour them onto a sheet tray to help. While delicious warm, letting them cool slightly helps integrate flavors.1 cup Millet, 2 cups no-sodium stock or water, 1 tablespoon butter
-
Preheat a grill pan over medium heat or prepare your outdoor grill.
-
Peel and slice red onions ¼ inch thick into rings. Peel and thinly slice shallots.1 medium red onion, 2 cobs yellow sweet corn
-
Lightly oil the sliced onions, shallots, and corn. Season generously with salt and pepper. Additionally, sprinkle the corn with ancho and New Mexico chili powders for a delightful spicy kick.
-
First, place all the onion rings on the grill, attempting to keep them nested for easier flipping. Place the shallots in a slightly cooler corner of the grill. Grill until tender and beautifully caramelized. Remove from heat. Next, place the corn cobs on the grill. Grill until tender; I prefer mine lightly grilled to maintain their fresh sweetness, but adjust to your preference.
-
Season both sides of the chicken breasts with salt, pepper, ancho chili powder, and New Mexico chili powder. Brush your grill plates or grill pan with oil. Place the chicken in the pan. To achieve perfectly even cooking, wrap the bottom of a cast iron skillet with aluminum foil and place it on top of the chicken breasts to weigh them down. Cook for 5 minutes on each side. Remove the chicken to a plate and tent loosely with foil to rest for 8 minutes. This resting period is crucial for juicy, tender chicken. -
While the chicken is cooking and resting, melt a pat of butter in a large skillet and add the cooked millet. Toast the millet over medium-low heat, seasoning with additional salt and pepper as desired. Continue cooking until the millet is slightly crunchy but still tender. This optional step significantly enhances the flavor and texture. Finally, fold in the chopped cilantro.2 chicken breasts
-
As your chicken rests, you can prepare the dressing and begin assembling your exquisite grain bowls.
Make the dressing:
-
Combine white balsamic vinegar, safflower oil, grilled shallots, honey, light brown sugar, and pitted cherries in a blender or food processor. Blend until the mixture is smooth and emulsified. Alternatively, you could juice the cherries separately and then whisk all ingredients together. Taste and adjust seasoning with salt, pepper, or a touch more sugar to achieve your preferred sweet-tangy balance.¾ cup white balsamic vinegar, ¾ cup safflower oil, 2 tablespoons honey, 1 tablespoon light brown sugar, ½ cup cherries
Assemble Grain Bowls:
-
Carefully cut the grilled corn kernels off the cobs.
-
To assemble each bowl, start with a generous scoop of the toasted millet. Artfully arrange the grilled onions, corn kernels, halved fresh cherries, and sliced grilled chicken on top of the millet. Gently place half a ball of creamy Burrata in the center of each bowl. Finish with a sprinkle of fresh chopped cilantro and a liberal drizzle of the bright cherry vinaigrette. For an extra touch of gourmet flavor, season the Burrata directly with a pinch of Maldon sea salt and freshly cracked black pepper; the combination with the creamy cheese is pure heaven.½ cup cherries, ½ cup cilantro, Kosher salt, pepper
