These Homemade KIND Bars are a healthier copycat KIND bar recipe! With fewer than 175 calories per bar, they are the perfect salty, sweet snack! They are crunchy, salty-sweet and drizzled with chocolate.

Ingredients  

  • ½ cup whole almonds roasted
  • ½ cup dry roasted peanuts
  • ½ cup walnuts chopped
  • cup puffed rice cereal such as Rice Krispies
  • 1 tablespoon flaxseed meal
  • 2 tablespoons molasses
  • 2 tablespoons honey
  • ½ teaspoon vanilla extract
  • ½ teaspoon kosher salt
  • 2 tablespoons dark chocolate chips or chopped chocolate bar

Instructions 

  • Line an 8×8 inch or 9×9 inch pan with criss-crossed parchment paper. Cut two strips the width of the pan sides, ensuring they are long enough to create a slight overhang. These overhangs will serve as convenient handles to easily lift the bars out later. Lightly spray the bottom of the pan with nonstick cooking spray before placing the first piece of parchment, then repeat for the second piece in the opposite direction.   • Spray a large mixing bowl with nonstick spray. This crucial step prevents the sticky bar mixture from adhering to the bowl as it cools and sets. In this prepared bowl, combine the whole almonds, dry roasted peanuts, chopped walnuts, puffed rice cereal, and flaxseed meal. Toss them gently to ensure an even distribution, then set the bowl aside.
  • In a small saucepan, combine the molasses, honey, vanilla extract, and kosher salt. Stir these ingredients together until well blended. Place the pot over medium-low heat and gently cook the mixture. Continue stirring occasionally until it visibly thickens and you begin to notice a subtle caramelized aroma. The key is to perceive when the honey starts to caramelize, which can be a bit challenging through the strong scent of molasses, but your nose will guide you!
  • Once the wet mixture has thickened sufficiently – meaning it doesn’t immediately flow back together on the bottom of the pot after being stirred – quickly pour it over the previously combined nut and cereal mixture in the large bowl. Working swiftly, stir the nuts and wet ingredients together until every piece is thoroughly coated. Immediately scrape this coated mixture into your prepared pan. Press the mixture down firmly and evenly to flatten it and ensure it fills the pan completely, creating a compact base for your bars.
  • Allow the bars to cool completely at room temperature. This step is essential for them to firm up properly before cutting.
  • Once completely cooled and firm, use the parchment paper overhangs as handles to carefully remove the block of bars from the pan. Place it on a clean cutting board. Using a sharp knife, cut the block into 10 evenly sized bars.
  • Melt the dark chocolate chips (or chopped chocolate bar). You can do this partially in the microwave (heating in short bursts, stirring frequently) or by placing a heatproof bowl over a pot of simmering water (a double boiler method), stirring until the chocolate is fully melted and smooth. Transfer the melted chocolate to a piping bag or a simple cornet made from parchment paper. Drizzle the chocolate artfully over each of the cut bars. Alternatively, a spoon can be used for a more rustic drizzle. Allow the chocolate to set. If the chocolate was overheated and lost its temper (meaning it won’t set quickly or will look streaky), you might need to place the bars in the refrigerator for a short period to help the chocolate firm up.
  • Enjoy your homemade KIND bars! I highly recommend trying them cold, straight from the refrigerator, as the chilled temperature enhances their crunchy texture.
