Ingredients

  • 1 cup sifted all-purpose flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda

  • 1 ½ teaspoons water
  • ½ cup semisweet chocolate chips (I recommend 1 cup for richer chocolate flavor!)
  • ½ cup brown sugar packed (for meringue)
Bakes in: a 8 x 13 inch rectangle baking dish, 2 inch height

Instructions

  • Preheat oven to 375°F (190°C) and generously grease a 12”x8”x2” baking dish. For thicker bars, an 8” square pan can also be used. For easier cleanup, I highly recommend lining your baking dish with parchment paper, as meringue can be a challenge to remove directly from the pan.
  • In a medium bowl, sift together the all-purpose flour, salt, baking soda, and baking powder. Set this dry mixture aside.
  • In a separate large bowl, using an electric mixer, cream the soft shortening with the granulated sugar and ¼ cup packed brown sugar until the mixture is very light and fluffy. This step is crucial for achieving a tender blondie base.
  • Add the egg yolk, water, and vanilla extract to the creamed shortening and sugar mixture. Mix thoroughly until all ingredients are well combined.
