- 1 pound Brussels sprouts, bottom stems trimmed and thinly sliced lengthwise
- 2 tablespoons extra-virgin olive oil

Instructions
- Preheat the oven to 400°F (200°C) with an empty sheet pan on the center rack.
- In a large bowl, toss the thinly sliced Brussels sprouts with 2 tablespoons olive oil, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper until evenly coated. Carefully spread them in a single layer across the preheated hot sheet pan.
- Roast for 15-20 minutes, or until the Brussels sprouts are beautifully browned, tender-crisp, and have crispy edges. Halfway through roasting (around 7-10 minutes), use a spatula to toss them around and flip them over for even cooking.
- While the sprouts are roasting, bring a large pot of generously salted water to a rolling boil. Add the orecchiette pasta and cook until al dente, according to package instructions. (You can typically start the pasta about 5-7 minutes after the sprouts go into the oven.) Before draining, reserve about 1/2 cup of the starchy pasta water.
- In a large skillet, warm 1 tablespoon of extra-virgin olive oil over medium heat. Add the minced garlic, red pepper flakes, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper. Sauté for about 30 seconds to 1 minute, until the garlic is fragrant and lightly golden, being careful not to burn it.
- Using a slotted spoon, transfer the cooked orecchiette pasta directly from the pot to the skillet with the garlic mixture. Add the fresh lemon juice. Toss vigorously, ensuring the pasta is thoroughly coated in the fragrant lemon-garlic-olive oil sauce. If the pasta seems a little dry, add a tablespoon or two of the reserved pasta water until a silky consistency is achieved.
- Finally, gently fold in the roasted Brussels sprouts, the fresh lemon zest, the grated Pecorino Romano cheese, and the chopped fresh parsley. Stir everything together until well combined.
