Why You’ll Love This Easy Strawberry Almond Scones Recipe

There are countless compelling reasons why these strawberry almond scones are destined to become a beloved staple in your baking repertoire. From their incredible flavor profile to their remarkably straightforward preparation, they offer a truly rewarding and enjoyable baking experience.

Celebrate the Best of Strawberry Season with Fresh Flavors

There’s no more delightful way to savor the vibrant bounty of strawberry season. The moment those sweet, juicy, and ruby-red berries become plentiful and delightfully affordable at your local grocery store or farmer’s market, it’s an undeniable sign to fill up your cart! While fresh strawberries are undeniably fantastic simply enjoyed on their own, perhaps with a dollop of Greek yogurt and a sprinkle of wholesome homemade granola, incorporating them into baked goods like these tender scones takes their seasonal charm to an entirely new level. As they bake, the strawberries soften beautifully, releasing their natural sugars and infusing every single crumb with an unmistakable, sun-kissed taste of summer. This recipe truly allows the natural sweetness and slight tang of the strawberries to shine, creating a perfectly balanced flavor.

Effortless Elegance with Simple Drop Scones

Say goodbye to tedious rolling, cutting, and shaping – no biscuit cutters or intricate techniques are required here! This is precisely why drop scones hold such a special and cherished place in my heart. Their charmingly rustic, delightfully imperfect, and naturally cracked shapes are incredibly appealing and effortlessly convey a sense of homemade warmth and authenticity. By simply scooping generous mounds of the dough directly onto your baking sheet, you completely bypass the often time-consuming and sometimes intimidating process of rolling out dough and using a cutter. This makes these strawberry almond scones an ideal recipe for those busy weekday mornings, last-minute brunch preparations, or whenever you crave a quick, yet undeniably impressive, homemade treat. An added bonus? Less handling of the dough typically translates to more tender and flaky scones, a crucial secret weapon for achieving that coveted light texture.

Convenient Make-Ahead and Flexible Freezing Options

Flexibility is an absolute game-changer in the kitchen, and this recipe delivers with multiple convenient make-ahead and freezing options. Whether you’re meticulously planning for an elegant weekend brunch, anticipating unexpected guests, or simply want to have delicious, fresh scones on demand throughout the week, you have the option to prepare the dough in advance and refrigerate it. Even better, freezing pre-portioned balls of the scone dough means you can enjoy freshly baked strawberry almond scones whenever the craving strikes, without the need to bake an entire batch all at once. Imagine waking up to the warm, comforting aroma of freshly baked scones with minimal effort – pure bliss and a wonderful way to elevate any morning!

What Exactly is a Scone? A Culinary Journey and British Tradition

Often compared to their American counterparts, biscuits, scones are indeed culinary cousins hailing from different continents. While they share similar core ingredients and fundamental preparation methods, they each boast distinct identities and cultural roles. Originating in Scotland, scones rapidly gained widespread popularity in Britain, where they became a quintessential component of the revered tradition of afternoon tea. Historically, early scones were much larger, often made with oats, and traditionally baked on a griddle. Over time, they graciously evolved into the smaller, lighter, oven-baked treats we know and lovingly cherish today.

The ideal scone, a true masterpiece of texture, features a delicate, slightly crisp, and golden crust on the outside. This delightful exterior gives way to a wonderfully fluffy, soft, and somewhat crumbly interior. When you gently split a perfectly baked scone in half, you should be able to admire those beautiful, airy layers – a hallmark of properly prepared dough made with very cold butter. These layers are crucial for that signature melt-in-your-mouth experience. Unlike savory American biscuits, which are typically served alongside gravies or as dinner rolls, British scones distinctly lean towards the sweeter side. However, it’s important to note they are not as intensely sweet as muffins or cupcakes. This moderate and balanced sweetness makes them incredibly versatile and appealing to a wide range of palates.

Scones are perfectly suited for various occasions, adapting beautifully to your mood and schedule. Enjoy them for a leisurely breakfast with a steaming hot cup of coffee, elevating your morning routine. Alternatively, transform your afternoon with the classic and comforting pairing of tea, a generous dollop of rich clotted cream, and your favorite sweet jam. Their comforting texture and beautifully balanced flavor make them a timeless and beloved baked good, cherished and enjoyed across cultures and generations.

Essential Ingredients for Perfect Strawberry Almond Scones

A vibrant flat lay photograph showcasing all the key ingredients for making delicious strawberry almond scones. Visible ingredients include all-purpose flour, cold cubes of unsalted butter, granulated sugar, fresh bright red strawberries, a bottle of almond extract, baking powder, a single large egg, a measuring cup of milk, vanilla extract, and a small pinch of salt.
All the essential ingredients meticulously laid out, ready to be transformed into light and flavorful strawberry almond scones.

Crafting truly exceptional scones begins with the careful selection of high-quality ingredients, each playing a vital role in the final texture and flavor. Here’s a detailed look at what you’ll need to make these incredible strawberry almond scones, and precisely why each component is crucial for success:

  • Fresh or Frozen Strawberries: The undisputed star of our scone recipe! You have the flexibility to use either peak-season fresh strawberries or convenient frozen strawberries. Regardless of your choice, ensure they are hulled and neatly sliced into small, bite-sized pieces. If opting for frozen berries, there’s absolutely no need to thaw them beforehand; simply add them directly to the dough. Using frozen berries can actually be an advantage, as they help to keep the dough colder, which is highly beneficial for achieving that desirable flaky scone texture.
  • All-Purpose Flour: This is the fundamental building block and structural foundation of your scones. Standard all-purpose flour provides the perfect balance for creating a tender, yet structurally sound scone that develops those highly sought-after layered centers. It’s advisable to avoid using self-rising flour unless explicitly specified in a recipe, as its pre-mixed leavening agents might interfere with the precise balance of this specific recipe.
  • Unsalted Butter (Chilled and Cubed): Here lies one of the most crucial secrets to truly flaky scones: using very cold, firm unsalted butter. Unlike many other baking recipes where butter and sugar are creamed together, for scones, you cut or rub small, distinct pieces of cold butter into the flour. As these tiny pockets of butter melt during the baking process in the hot oven, they release steam. This steam creates miniature air pockets, which in turn produce those beautiful, airy, and wonderfully flaky layers that give scones their distinctive, irresistible crumb. Using unsalted butter grants you precise control over the overall saltiness of your finished baked goods.
  • Granulated Sugar: This recipe thoughtfully incorporates granulated sugar to lightly sweeten the scones. It provides just enough subtle sweetness to beautifully complement the natural tartness of the strawberries and the rich undertones of almond without ever overwhelming the delicate palate. This balanced sweetness makes these scones perfect for any time of day, from a morning indulgence to an afternoon treat.
  • Baking Powder: This is our primary leavening agent, responsible for the wonderful lift and light texture of your scones. Baking powder reacts chemically with the liquid components in the dough and the intense heat of the oven, producing carbon dioxide bubbles. These bubbles expand, causing the scones to rise beautifully and become exceptionally light and fluffy. Always double-check that your baking powder is fresh for optimal and reliable lift!
  • Kosher Salt: A modest amount of salt is an absolute culinary necessity. In both sweet and savory recipes, salt is essential for balancing and profoundly enhancing all the existing flavors. In these scones, it helps to deepen and bring forward the vibrant strawberry and rich almond notes, preventing the final product from tasting flat or one-dimensional.
  • Large Egg: The egg performs multiple critical functions in this recipe. It acts as an effective binder, holding the dough together, while simultaneously adding crucial richness and moisture. You’ll whisk one large egg thoroughly with the milk and extracts before carefully incorporating these liquid ingredients into the dry mixture.
  • Milk: The beauty of this recipe is its adaptability with milk. Any type of milk will work beautifully here, from skim to reduced-fat, or even popular plant-based alternatives like oat milk or almond milk, offering flexibility based on your dietary preferences or what you have on hand. While some scone recipes might call for heavy cream for an extra-rich texture, regular milk contributes to a slightly lighter scone and is typically a more common ingredient to have readily available in your refrigerator.
  • Almond Extract: This magical and aromatic ingredient is a game-changer, providing a wonderfully nutty aroma and a distinct flavor that impeccably complements the juicy strawberries. The classic combination of strawberries and almonds is a celebrated pairing in the culinary world, and its inclusion in these scones truly elevates them beyond the ordinary, adding a layer of sophisticated flavor.
  • Vanilla Extract: A touch of pure vanilla extract is added to round out the overall flavor profile of the scones. It contributes a warm, subtle sweetness and a profound depth that expertly enhances all the other ingredients without ever becoming overpowering. This classic extract is a must-have for almost any sweet baked good.

Step-by-Step Guide to Making Perfect Strawberry Almond Drop Scones

Creating these scrumptious strawberry almond scones is an incredibly straightforward and enjoyable process, especially given that they are designed as easy drop scones! Follow these detailed, step-by-step instructions for a flawless and delicious batch every single time:

  1. Preheat Your Oven and Prepare Baking Sheets: Begin by preheating your oven to 400 degrees F (200 degrees C). Allowing the oven to fully reach temperature before placing your scones inside is crucial for promoting an even and beautiful rise. Line two large baking sheets with parchment paper. This simple step is vital for preventing sticking, ensuring easy removal of your baked scones, and making cleanup an absolute breeze.
  2. Combine the Dry Ingredients in a Large Bowl: In a spacious large bowl, thoroughly whisk together the all-purpose flour, granulated sugar, baking powder, and kosher salt. Whisking vigorously ensures that all the leavening agents and flavorings are evenly distributed throughout the flour mixture. This meticulous step is key to achieving a consistent texture and uniform rise in your baked scones.
  3. Incorporate the Cold Butter for Flakiness: This particular step is absolutely crucial for achieving that signature flaky and tender scone texture. Take your very cold, firm, and precisely cubed unsalted butter and add it directly to the dry ingredients in the bowl. Using a pastry blender (often referred to as a pastry cutter) or even a sturdy fork, systematically cut the butter into the flour mixture. Alternatively, for a more hands-on approach, you can use your fingertips to quickly rub the butter into the flour. The key is to work quickly to prevent the butter from warming too much. The ultimate goal is to end up with a mixture that wonderfully resembles coarse crumbs, with some distinct pea-sized pieces of butter still clearly visible throughout the flour. These tiny pockets of cold butter will strategically release steam during the baking process, which in turn creates those beautiful, airy, and delicious layers.
  4. A visual guide depicting the initial steps: first, dry ingredients are thoroughly mixed in a bowl, followed by cold cubed butter being cut into the flour mixture until coarse crumbs are formed.
The dry ingredients and the perfectly cut-in cold butter, creating the foundation for flaky scones.
  5. Prepare and Combine the Wet Ingredients: In a separate, medium-sized bowl, whisk together the large egg, the milk (any type you prefer), vanilla extract, and almond extract until all these liquid components are thoroughly combined and homogenous. Now, gently pour this perfectly whisked wet mixture into the bowl containing your flour and butter mixture. Using a sturdy spoon or a flexible spatula, stir the ingredients until they are just barely combined. At this stage, the dough will appear delightfully shaggy and somewhat crumbly. It is paramount to resist the urge to overmix! Overworking the dough will rapidly develop the gluten in the flour, which inevitably leads to tough, rather than light and airy, scones. It’s perfectly acceptable for it to look a bit messy and unformed at this stage; there’s no need to turn it out onto a floured surface.
  6. A small bowl holding whisked wet ingredients is positioned beside a larger bowl containing the flour and butter mixture, illustrating the moment before combining the two components for scone dough.
Carefully combining the wet ingredients into the dry mixture for a tender scone dough.
  7. Gently Fold in Strawberries and Form Dough: At this point, gently fold in your neatly sliced strawberries. Once the strawberries are incorporated and evenly distributed, use your hands to very lightly press the shaggy dough together into a relatively cohesive ball directly within the bowl. It is crucial, once again, to be extremely careful not to overwork the dough. Excessive handling can not only make your finished scones tough and unappealing but also significantly increase the likelihood of the strawberry juices bleeding excessively, potentially staining the dough and affecting its appearance.
  8. Scoop and Bake the Drop Scones: Employing a 1/4-cup to 1/3-cup cookie scoop (or simply using two spoons if you don’t have a scoop), drop generous mounds of the dough onto the prepared baking sheets. Ensure you space them about 2-3 inches apart from each other to allow for proper air circulation during baking and ample room for them to expand without crowding. Bake the scones in your preheated oven for approximately 18-20 minutes, or until they achieve a beautiful light golden brown color on top and the characteristic cracks on their surface appear perfectly set. The exact baking time might vary slightly depending on the calibration of your individual oven. Once perfectly baked, carefully transfer the warm scones to a wire rack to cool completely. Allowing them to cool fully is an important step before applying the glaze, ensuring it sets properly.
  9. The scone dough, studded with fresh strawberries, has been scooped into rustic mounds and placed on a parchment-lined baking sheet, prepared for baking.

  10. Prepare the Irresistible Almond Glaze: While your freshly baked scones are cooling, take this opportunity to prepare the optional, yet highly recommended, almond glaze. In a small bowl, meticulously whisk together the confectioners’ (also known as powdered) sugar, milk, vanilla extract, and almond extract until the mixture is perfectly smooth and entirely free of any lumps. For the ideal consistency, adjust as needed: if the glaze appears too thick for drizzling, gradually add a tiny bit more milk, a few drops at a time; if it seems too thin, incorporate a bit more confectioners’ sugar until the desired consistency is achieved.
  11. Glaze and Serve Your Masterpiece: Once the scones have cooled completely, generously drizzle the prepared almond glaze over their inviting tops. For the best visual presentation and optimal flavor, allow the glaze a few minutes to set and firm up before serving. This creates a lovely, slightly crisp, and sweet topping that exquisitely complements the soft, flavorful scone underneath, adding the perfect finishing touch to your homemade creation.

Storage and Freezing Tips for Your Homemade Strawberry Almond Scones

Scones, much like many other delicate freshly baked goods, are truly at their absolute peak of flavor and texture the very day they are made. The crust is at its crispiest, the interior is wonderfully tender, and all the vibrant flavors are perfectly melded. However, with proper storage and smart freezing techniques, you can extend the enjoyment of these delightful strawberry almond scones for longer, ensuring you always have a delicious treat on hand.

Short-Term Storage for Baked Scones

If you bake the entire batch of scones and find yourself with delicious leftovers, the best way to maintain their quality is to store them in an airtight container at room temperature for up to 1-2 days. To revive their delicate crust and bring back their warm, soft interior, simply reheat them in a preheated 300-degree F (150 degrees C) oven for approximately 5-7 minutes. This gentle reheating process will miraculously bring them back to a wonderfully fresh-like state, as if they just came out of the oven.

Freezing Unbaked Scone Dough (Highly Recommended!)

This is arguably my favorite and most recommended method for ensuring you can enjoy fresh, warm scones anytime you desire! Begin by portioning out the raw scone dough onto a baking sheet that has been lined with parchment paper or waxed paper, just as you would if you were baking them immediately. Ensure each scone ball is spaced apart to prevent them from sticking together. Carefully place the entire baking sheet into the freezer. Once the individual scone balls are completely solid (this typically takes a couple of hours), you can then transfer them into a single freezer-safe airtight container or a large freezer bag. They will keep beautifully for up to 1 month. The true beauty of this method is that you can bake them directly from frozen; simply add a few extra minutes to the baking time (around 20-25 minutes at 400F/200C) until they are golden brown and cooked through. Remember, the delicate glaze cannot be frozen, so you’ll need to whisk up a fresh batch of glaze when you’re ready to serve these delightful warm scones.

Freezing Baked Scones

If you prefer the convenience of freezing already baked scones, ensure they are cooled completely first after coming out of the oven. Then, carefully place them in an airtight freezer-safe container or a durable freezer bag. Baked scones can be frozen for up to 1 month. To reheat, you can thaw them first, then warm them in a 325-degree F (160 degrees C) oven for 12-14 minutes. It’s important to be aware that if you apply the glaze before freezing, it will likely become a little gooey or may lose its crisp, set texture upon thawing and reheating. For the best quality, it’s often preferable to freeze the scones unglazed and apply a fresh batch of glaze after they have been thawed and warmed.

Expert Baking Tips for Flawless Strawberry Almond Scones

Achieving light, flaky, and exceptionally flavorful scones is easier than you might think when you keep a few critical principles in mind. These expert baking tips will help ensure your strawberry almond scones turn out perfectly, consistently delivering that delightful homemade quality every single time:

  • Keep Your Butter COLD: The Golden Rule: This tip cannot be stressed enough! The butter you use must be thoroughly chilled and very firm. When you cut or rub it into the flour mixture, it should remain in small, distinct pieces (think the size of small peas or coarse crumbs). If the butter warms up and melts into the flour too soon, you won’t get those crucial pockets of steam during baking that are responsible for creating the wonderfully layered, flaky texture characteristic of a perfect scone. If your kitchen tends to be warm, an excellent trick is to chill your flour in the refrigerator for 15-20 minutes before you even begin mixing the dough.
  • Do Not Overwork the Dough: Another Essential Commandment: This is another absolutely critical piece of advice. Once the wet ingredients are added to the dry, mix only until they are just combined and the dough barely comes together. Overmixing develops the gluten in the flour, which will inevitably result in tough, dense scones rather than the desired light, airy, and tender ones. Gently pressing the shaggy dough into a cohesive ball with your hands after stirring is often more than sufficient. Embrace the rustic look!
  • Make the Dough in Advance for Convenience: For the ultimate in baking convenience and to make your life easier, you can prepare the scone dough up to 3 days ahead of time. Simply cover the bowl containing the dough tightly with plastic wrap and store it in the refrigerator. Alternatively, you can portion out the dough onto a lined baking sheet, cover it, and then refrigerate until you’re ready to bake. Chilled dough is actually often easier to handle and can even contribute to a slightly better rise and flakier texture when it hits the hot oven.
  • Embrace the Freezer for On-Demand Freshness: Since freshly baked scones offer the absolute best flavor and texture, take full advantage of the option to freeze scone dough. Before baking, consider how many scones you typically want to eat in one sitting. By always keeping a bag of pre-portioned, frozen scone dough in your freezer, you can effortlessly bake just one or two fresh scones even on the busiest mornings. This transforms your breakfast routine, making homemade goodness accessible anytime.
  • Avoid Overcrowding Your Baking Sheet: It’s tempting to try and fit all the scones on one sheet, but resist! Give your scones ample space to spread and rise without touching each other. Placing them too close together can inhibit proper air circulation around each scone, leading to uneven baking and potentially soft, rather than delightfully crisp, sides. Aim for about 2-3 inches of space between each drop scone.
  • Ensure Your Leavening Agents Are Fresh: Baking powder, like all leavening agents, loses its potency over time, which can result in flat, heavy scones. Always check the expiration date on your container and ensure your baking powder is fresh. A quick test for freshness: mix a teaspoon of baking powder with a few tablespoons of hot water; if it fizzes vigorously, it’s still good to go!
  • Don’t Discount the Glaze (Unless You Prefer Otherwise): While the almond glaze is technically optional, it adds a truly lovely touch of balanced sweetness and an extra layer of almond flavor that perfectly complements the strawberries. Beyond taste, it also gives the scones a beautiful, professionally finished look, making them even more appealing.

Frequently Asked Questions (FAQs) About Strawberry Almond Scones

Can I add actual almonds to the scone dough for extra texture?

Absolutely, and it’s highly recommended if you love almonds! To significantly enhance the almond flavor and add a delightful, subtle crunch, you can stir about 1/4 cup of thinly sliced or finely chopped almonds directly into the dry ingredients before you incorporate any wet components. For an extra visual appeal and textural dimension, you could also sprinkle a few almonds on top of the scones just before glazing them, or even gently press them lightly into the dough before baking. This provides a lovely roasted nut flavor and additional texture.

Do I have to make the almond glaze, or can I skip it?

No, the almond glaze is entirely optional, so feel free to skip it if you prefer! The scones themselves already have a generous amount of almond extract mixed into the wet ingredients, guaranteeing you’ll still experience that delicious almond flavor even without the glaze. If you prefer a simpler, less sweet scone, leaving the tops plain is a perfectly valid choice. Another wonderful and popular alternative is to brush the portioned, unbaked dough with a little milk (or even a beaten egg wash for extra shine) and then generously sprinkle them with coarse sugar (such as turbinado or sparkling sugar) before baking. This gives them a beautiful, glittering sparkle and a delightful crunch, adding another layer of appealing texture without the full sweetness of a glaze.

Can I use other types of berries instead of strawberries in this recipe?

Yes, this scone recipe is remarkably versatile and adaptable to various fruits! Blueberries, raspberries, or blackberries would all be absolutely excellent and delicious substitutes for strawberries. You can use them either fresh or frozen, following the exact same guidelines as for strawberries (no need to thaw if frozen). It’s generally best to keep the total amount of berries roughly the same (about 1 cup) to maintain the optimal consistency of the dough. If you’re swapping out the berries, you might also consider slightly adjusting the extract to match: for example, using a little more vanilla extract or adding some fresh lemon zest if you’re omitting the almond extract for a different flavor profile.

What is the best way to serve strawberry almond scones?

These strawberry almond scones are incredibly versatile and can be enjoyed in many ways! For a truly authentic British experience, serve them warm and split in half with a generous dollop of clotted cream (or good quality whipped cream as a delightful substitute) and a spoonful of homemade strawberry jam or raspberry preserve. They are also wonderful simply with a spread of softened butter, cream cheese, or even lemon curd. A side of extra fresh berries adds a lovely burst of freshness and color. Pair them with a warm cup of English breakfast tea, a robust coffee, or a refreshing glass of cold milk for a comforting and satisfying treat at any time of day.

Serving Suggestions & Delightful Variations for Your Scones

While these strawberry almond scones are undeniably delicious and satisfying on their own, fresh from the oven, they also serve as a wonderful culinary canvas for further enhancement and creative customization. Here are some inspiring ideas to elevate your scone experience, ensuring every bite is a memorable one:

Classic Serving Suggestions: Timeless Pairings

  • With Clotted Cream and Jam: For a truly authentic and quintessential British experience, serve these scones warm and gently split in half. Adorn them with a generous, luscious dollop of rich clotted cream (or a dollop of freshly whipped cream as a delightful, lighter substitute) and a spoonful of your favorite homemade strawberry jam or a vibrant raspberry preserve. This traditional combination is pure bliss.
  • Simple Spreads: Sometimes, simplicity is key. A light spread of softened, high-quality butter or a creamy, tangy cream cheese can beautifully highlight the scone’s natural flavors without overpowering them.
  • Fresh Berry Medley: Enhance the fruity notes by serving a colorful side of extra fresh strawberries, perhaps mixed with a few blueberries or raspberries. This adds a burst of freshness, a lovely textural contrast, and a vibrant pop of color to your plate.
  • Perfect Pairings with Beverages: These scones are the ideal accompaniment to your favorite hot beverages. Enjoy them with a steaming cup of classic English breakfast tea for a traditional afternoon tea moment, a robust and invigorating coffee to kickstart your morning, or a simple, refreshing glass of cold milk for a comforting and nostalgic treat.

Creative Variations to Try: Customize Your Scones

  • Zesty Lemon Twist: For a brighter, more invigorating flavor profile that perfectly complements the strawberries, consider adding 1-2 teaspoons of finely grated fresh lemon zest to the dry ingredients. Strawberries and lemon are a match made in culinary heaven!
  • Added Nutty Crunch: As explored in our FAQs, for an irresistible added textural dimension and a deeper nutty flavor, stir in about 1/4 cup of chopped pecans, walnuts, or additional sliced almonds to the dry ingredients. This offers a delightful contrast to the soft scone.
  • Decadent Chocolate Chip Scones: For those with a sweet tooth, gently fold in 1/2 cup of white chocolate chips or rich dark chocolate chips along with the strawberries. This creates a truly decadent and indulgent twist on the classic scone.
  • Warm Spiced Scones: A small pinch (around 1/4 teaspoon) of warming spices like ground cinnamon or aromatic cardamom can add a deep, inviting, and comforting depth to the dough. This variation is particularly wonderful if you’re experimenting with other fruits like tender apples or juicy pears in place of strawberries.
  • Fragrant Orange Blossom Water Glaze: For an exotic and beautifully floral note that pairs exquisitely with berries, try replacing half of the almond extract in the glaze recipe with a delicate splash of orange blossom water.

Ingredients

For Scones

  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/3 cup granulated sugar
  • 1/4 teaspoon kosher salt
  • 6 ounces (1-1/2 sticks) chilled unsalted butter, cubed
  • 1 cup sliced strawberries, either fresh or frozen (do not thaw if frozen)
  • 1 large egg
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract

For Glaze

  • 1 cup confectioners’ sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon almond extract

Instructions

  1. Preheat your oven to 400 degrees F (200 C). Line 2 large baking sheets with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and kosher salt until thoroughly combined.
  3. Add the cold, cubed butter to the dry ingredients. Use a fork or pastry blender (or your fingertips) to cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces remaining. Gently fold in the sliced strawberries.
  4. In a small separate bowl, whisk together the egg, milk, vanilla extract, and almond extract. Pour this wet mixture into the flour-butter mixture. Stir gently with a spoon or spatula until the dough just comes together into shaggy clumps. Do not overmix; then lightly press the dough together with your hands to form a cohesive ball.
  5. Using a 1/4-cup to 1/3-cup cookie scoop, drop mounds of dough onto the prepared baking sheets, spacing them about 2-3 inches apart.
  6. Bake for 18-20 minutes, or until the scones are light golden brown on top and firm to the touch.
  7. Transfer the baked scones to a wire rack and allow them to cool completely before glazing.
  8. For the glaze, whisk together the confectioners’ sugar, milk, vanilla extract, and almond extract in a small bowl until smooth. Spoon or drizzle the glaze over the cooled scones. Allow the glaze to set for a few minutes before serving. (Adjust consistency if needed: add a little more milk if too thick, or more confectioners’ sugar if too thin.)

Notes

Make-Ahead Dough: You can prepare the scone dough up to 3 days in advance. Cover the bowl tightly with plastic wrap and store it in the refrigerator until ready to bake.

Best Fresh: Scones are at their absolute best the day they are baked. Store any leftovers in an airtight container at room temperature for 1-2 days. To revive them, warm in a 300-degree F (150 C) oven for 5-7 minutes.

Freezing Unbaked Dough: For future enjoyment, scoop the dough onto a parchment-lined baking sheet and freeze until solid. Once frozen, transfer the scone balls to an airtight freezer-safe container or bag. Freeze for up to 1 month. Bake directly from frozen at 400 degrees F (200 C) for 20-25 minutes. Do not thaw beforehand.

Freezing Baked Scones: Baked and cooled scones can be frozen in an airtight container for up to 1 month. Thaw and reheat in a 325-degree F (160 C) oven for 12-14 minutes. Note that the glaze may become gooey.

Glaze Alternative: If you prefer not to use the glaze, you can brush the tops of the unbaked, portioned dough with a little milk and sprinkle with coarse sugar for a shimmering, subtly crunchy finish.

Add Nuts: Stir 1/4 cup of thinly sliced almonds into the dry ingredients for an enhanced almond flavor and texture. You can also sprinkle almonds on top before or after glazing.
