While some culinary delights, like a rich Nutella, creamy peanut butter, or even a robust homemade tomato pasta sauce, tempt me to grab a spoon and indulge directly from the jar, my homemade cherry preserves inspire a different kind of craving. They beckon for thoughtful pairings, creations that celebrate their bright, fruity character rather than overshadowing it. So, what’s the absolute best way to enjoy these jewel-toned preserves? My go-to, without a doubt, is a generous dollop spread over luscious black pepper honey ricotta on a perfectly toasted slice of sourdough. It’s a combination so divine, it feels almost obvious.

The Art of the Perfect Ricotta Toast

You might think regular ricotta would suffice, but I believe in elevating every ingredient. My secret for an “extra” special ricotta toast involves a simple yet impactful blend: creamy ricotta mixed with a generous grind of fresh black pepper and a luxurious swirl of local honey. The pepper adds a delightful warmth and subtle spice, while the honey complements the ricotta’s richness and the preserves’ sweetness. For the base, I always keep a pre-sliced loaf of homemade sourdough in my freezer – it’s a game-changer for spontaneous moments of culinary inspiration. This particular batch was a Smoked Paprika Sourdough, adding another layer of complex, smoky flavor. Imagine all these nuanced tastes marrying in your mouth – the tangy sourdough, the creamy, peppery-sweet ricotta, and the bright, fruity preserves. Yes, it’s a little bit of heaven on a plate, an easy yet sophisticated snack or breakfast that’s ready in minutes.

Embracing and Preserving Summer’s Fleeting Magic: Cherries

There’s an undeniable magic to summer fruits, and if I had to pick a favorite, cherries would undoubtedly be at the top of my list. Just last week marked the end of the local cherry season here in NYC. Like fleeting red phantoms, they appear one minute, coating farmer’s market stalls in a symphony of crimson, and then, almost overnight, they vanish. First, the tart, ruby-red varieties disappear, followed closely by the plump, dark sweet cherries. Every year, their departure leaves me with a touch of melancholy, a bittersweet reminder of summer’s ephemeral beauty and the vibrant flavors we wait all year to savor.

My first summer in the city was a stark lesson in seasonal timing; the cherries were gone before I even began to explore cherry desserts or baked goods, like that incredible cherry sourdough bread. That year, I vowed never to let such a tragedy strike again. This season, I indulged in what some might call “cherry mania,” and honestly, the evidence is pretty clear on my Instagram feed! It was a delightful obsession, prompting me to experiment with cherries in every conceivable way, eager to capture their essence before they disappeared for another year.

My culinary adventures with cherries have led me to some truly exciting creations. I’ve incorporated them into vibrant cherry burrata grain bowls, where their sweetness beautifully contrasts with creamy burrata and earthy grains. I’ve folded them into the rich indulgence of bourbon cherry caramel ice cream, creating a sophisticated dessert. I even ventured into making pickled cherries, which then found their way into a refreshing stone fruit panzanella salad, proving their incredible versatility in both sweet and savory applications. By the end of summer, alongside these exquisite cherry preserves, my pantry shelves are proudly stocked with jars of easy peach preserves (no pectin required!) and quick strawberry jam, ensuring a taste of sunshine long after the warm months fade.

The Unexpected Secret Ingredient: Cherry Pits for Deeper Flavor

Now, for the “one simple addition” that truly sets these preserves apart – a little trade secret from my kitchen. Don’t discard those cherry pits! Instead, carefully gather them, wrap them securely in a single layer of cheesecloth, and tie the bundle shut with kitchen twine. This small sachet of pits is then cooked alongside your cherries, sugar, and lemon juice. As the preserves simmer, the pits will slowly release a subtle, delicate depth of flavor into the mixture. It’s an almond-like, almost marzipan-esque note, reminiscent of cinnamon, that adds complexity and a unique warmth without overpowering the bright fruitiness of the cherries. While you could “cheat” and simply add a cinnamon stick, I find immense satisfaction in utilizing every part of the cherry. It’s a nod to sustainable cooking, a way of extracting maximum flavor from the fruit itself, and a gesture that, in my imagination, makes Mother Nature smile.

This method not only enhances the flavor but also subtly contributes to the preserve’s setting. Cherry pits contain natural pectin, the compound responsible for thickening jams and jellies. By cooking them gently, you’re extracting some of this natural thickener, resulting in a beautifully set preserve without the need for commercial pectin. It’s a traditional technique that speaks to the wisdom of old-world preserve making, offering an authentic taste that cannot be replicated.

But just in case you find yourself with an abundance of fresh cherries and a longing for other classic desserts, remember that these preserves are also fantastic for filling a glorious cherry pie with an almond crust. I’m always here for that sweet, comforting delight! Or perhaps a rustic, free-form cherry galette with an almond buttermilk crust, showcasing the preserves in a beautifully simple yet elegant way. The possibilities are truly endless when you have a jar of these exceptional homemade cherry preserves at your fingertips.

Ingredients

  • 3 cups Cherries pitted (566g) I used a mix of sweet & tart
  • 2 cups Granulated Sugar 230g
  • 1 lemon juiced (40g)
  • Cherry Pits

Instructions

  • Place cherry pits in a single layer of cheesecloth and tie shut with kitchen twine.
  • In a non-reactive saucepot, combine pitted cherries, granulated sugar, and fresh lemon juice. Nestle the bundle of pits into the cherry mixture. Cook on medium heat, stirring occasionally, until the preserves begin to thicken to your desired consistency.
  • To test for doneness, place a small spoonful of preserves on a plate that has been chilled in the freezer. Return the plate to the freezer for a minute. When you run your finger through the preserves, they should hold a distinct line without running down the plate. Remove the pot from heat immediately once the desired consistency is reached.
  • Carefully remove the cheesecloth pit bundle from the pot. Using a spoon or tongs (be cautious, as it will be hot!), gently squeeze any remaining liquid from the pit bundle back into the preserves. This ensures maximum flavor extraction.
  • Ladle the hot preserves into clean, sterile jars or your preferred airtight containers. While you can process them properly for longer shelf-stable canning, I typically store mine in the refrigerator for immediate enjoyment and use over several weeks.

Notes

I don’t typically bother to cut my cherries up, especially because the ones I find at the farmers market are usually small. If your cherries are larger, or if you prefer a more uniform, homogenous preserve texture, feel free to cut them in half before cooking!

Regarding the cheesecloth for the pits: I intentionally use only a single layer. This allows for excellent flavor interchange between the pits and the simmering preserves. Using too many layers of cheesecloth can absorb some of that precious cherry liquid, and we want all that deliciousness to stay right in the preserves!

Yield: Approximately 2 cups of finished preserves.
