  • Next, use the same mandolin or sharp knife to slice the white onion thinly, also longways (from the top to the stem), followed by the red bell pepper. Aim for similar thinness for all vegetables to ensure an even texture throughout the slaw.
  • In a small mixing bowl, whisk together the Greek yogurt, safflower oil, and white balsamic vinegar until well combined and smooth. While you can add these ingredients directly to the slaw mix, whisking them separately first ensures a more uniform and easier-to-incorporate dressing. However, I understand that sometimes an extra dish feels like too much effort – I’m with you, and it will still work if mixed directly into the cabbage, just require a bit more effort.
  • Pour the prepared dressing over the sliced cabbage, onion, and bell pepper. Toss thoroughly to coat all the vegetables evenly. Sprinkle with kosher salt and freshly cracked black pepper to taste. For the most effective coating and to really massage the dressing into the cabbage, I find it easiest to mix by hand.
