This shaved cauliflower salad is crisp and fresh with a mix of arugula, pickled raisins, toasted walnuts, red onions, Parmesan, and a mustardy vinaigrette. It’s a delightful blend of textures and flavors.

Ingredients

For the Pickled Raisins:

  • 2 tablespoons white wine vinegar
  • 1 teaspoon honey
  • 1 tablespoon hot water
  • Pinch red pepper flakes
  • 1/3 cup golden raisins

For the Salad:

  • 1 head cauliflower (about 2 pounds, leaves removed and stem trimmed)
  • 2 cups baby arugula
