Ingredients
- 1 navel orange
- 1-1/2 cups mixed olives, drained (3-4 types such as Kalamata, Castelvetrano, Ligurian, Picholine, Niçoise and Cerignola)
- 1/4 cup extra virgin olive oil
- 1 red chili, thinly sliced (adjust to taste)
- 1/2 teaspoon coriander seeds
- 1/2 teaspoon cumin seeds
- 3 sprigs fresh rosemary
Instructions
- Use a vegetable peeler or microplane to remove the zest from the orange, carefully avoiding the bitter white pith. Then, slice off all remaining white pith from the orange. Carefully cut out the individual orange segments and dice them into small, bite-sized pieces. Place the diced oranges and zest in a large mixing bowl.
- Add the drained mixed olives, extra virgin olive oil, thinly sliced red chili, coriander seeds, cumin seeds, and fresh rosemary sprigs to the bowl with the oranges. Gently stir all ingredients together until well combined and coated.
- Cover the bowl and allow the mixture to marinate for at least 1 hour at room temperature before serving. For deeper flavor, marinate for several hours or overnight in the refrigerator, then bring to room temperature before serving for optimal taste.

This recipe yields approximately 2 cups of delicious marinated olives.
The choice between pitted and unpitted olives is entirely yours, based on your personal preference and how you plan to serve them.
