  • 1 15-ounce can black beans, rinsed and drained
  • 1 cup canned or frozen corn, thawed if frozen
  • 1 medium tomato, diced
  • 1 small red onion, roughly chopped
  • 1 cup refried beans
  • Cooked chicken, ground beef or chorizo, optional
  • 1 jalapeno, thinly sliced (for garnish)
  • 1 handful cilantro leaves, torn (for garnish)
  • 1/3 cup salsa (for garnish)
