  • Lightly spray a 9” x 11” baking dish with cooking spray. Arrange the sliced cinnamon rolls in the dish, spacing them about 2 inches apart. I typically offset them (e.g., a row of 2, then one in the center, then another row of 2) to give them adequate space to expand without overcrowding during proofing and baking.

Final Proof:

  • Cover the baking dish tightly with plastic wrap and return it to your warm spot for an additional 20-40 minutes for the final proof (second rise). I find 20 minutes is often sufficient, after which I move the dish aside and preheat my oven to 350°F (175°C) convection. Remember that smaller rolls will proof and bake faster than larger ones.

Bake the Rolls:

  • Remove the plastic wrap from the baking dish. Bake the cinnamon rolls in the preheated oven at 350°F (175°C) for approximately 15-20 minutes. In my oven, they are usually perfect at 18 minutes.
