Life has a wonderful way of reshaping our priorities and revealing new sources of joy. For many years, my early twenties were a whirlwind of activity, driven by a deep-seated fear of missing out. The idea of a quiet evening at home felt like a missed opportunity for adventure, for stories to tell, for life experiences to accumulate. I constantly sought out bustling events, vibrant social gatherings, and new places to explore, convinced that true living happened outside the confines of my own four walls. It was an exhilarating, albeit sometimes exhausting, period.

Yet, as the years have gracefully passed, a profound shift has occurred. The constant need for external stimulation has softened, replaced by a deep appreciation for the tranquility and comfort of home. There’s an unparalleled delight in slipping into comfy clothes, snuggling under a soft blanket on the sofa, and simply being present in my own space. This transition from a life of constant motion to one that embraces stillness has been incredibly liberating, allowing me to discover the rich tapestry of experiences that unfold within the sanctuary of home.

One of the greatest joys I’ve found in this newfound appreciation for domesticity is the art of baking. It’s a meditative practice that transforms a simple day into a sensory feast. Even if my weekend plans involve nothing more than staying in, I ensure my day is packed with culinary adventures. While I do manage to squeeze in household chores, it’s the time spent in the kitchen, experimenting with new recipes or perfecting old favorites, that truly brings me peace and fulfillment. The advantages of being at home are endless: makeup-free days, comfortable pajamas, and the freedom to tackle any project that captures my interest.

Baking bread, in particular, has become a cherished ritual. It’s an activity that, while requiring a bit of patience, is far from difficult. The true challenge often lies in carving out dedicated time amidst a busy schedule. Ideally, you want to set aside a full day, or at least a relaxed afternoon, to fully immerse yourself in the process. However, even when time is a luxury, modern kitchen tools like the food processor make bread making remarkably accessible. While I genuinely find the rhythmic act of kneading therapeutic, the food processor allows me to achieve a beautifully developed dough with minimal hands-on effort, perfect for those times when I’m multitasking or simply seeking a quicker route to freshly baked goodness.

My latest culinary passion project, and one that consistently brings immense satisfaction, is crafting these delightful Rosemary Olive Knots. There’s something inherently special about serving homemade rolls alongside any meal. They effortlessly elevate even the simplest dinner, transforming it into an occasion. The aroma alone, filling the house with hints of fresh herbs and warm bread, is enough to gather everyone around the table.

How to Master Rosemary Olive Knots: A Step-by-Step Guide

Creating these aromatic Rosemary Olive Knots is a straightforward process that yields incredibly rewarding results. It all begins with a simple yet robust dough. After effortlessly whipping up the base dough in the food processor – a method that saves time without sacrificing quality – I allow it the necessary time to rise until it’s light and airy. This initial rise is crucial for developing flavor and texture.

Once the dough has doubled in size, the fun part begins: incorporating the vibrant flavors of the filling. I roll out the dough into a neat rectangle, creating a perfect canvas for our aromatic blend. Half of this rectangle is then generously covered with a fragrant mixture of finely chopped Kalamata olives, fresh rosemary, and a drizzle of quality olive oil. The briny olives and pungent rosemary infuse the dough with a Mediterranean essence that is truly captivating.

Next, the dough is folded over to encapsulate the olive and rosemary mixture. This ensures every bite of the finished knot is bursting with flavor. With a sharp pizza wheel, I then cut the dough into strips, ready for shaping. The beauty of these knots lies in their simplicity; each strip is loosely tied into a knot, creating a rustic yet elegant shape that’s surprisingly easy to achieve, even for novice bakers.

Patience truly is a virtue during the second rise, also known as proofing. This stage is vital for achieving the rolls’ characteristic soft and chewy interior. I carefully wait until each knot has visibly doubled in size, a clear indication that the yeast is active and the rolls are ready for baking. This careful attention to proofing guarantees a light, airy crumb rather than a dense, heavy one.

The anticipation builds as these golden knots emerge from the oven, their crust perfectly browned and their aroma filling the kitchen. The taste is a harmonious balance: a delightful chewiness, herbaceous notes from the rosemary, and a pleasant brininess from the Kalamata olives. They make for exceptional dinner rolls, so delicious that you might find yourself indulging a little too much from the bread basket, happily “ruining” your meal with their irresistible charm!

With Kalamata olives and fresh herbs, these rosemary olive knots are only look complicated. The dough is simple to shape—just tie a knot.

Ingredients

  • For dough
  • 2-1/2 teaspoons dry active yeast
  • 1-1/2 cups warm water
  • 3 tablespoons olive oil
  • 3-1/2 cups all-purpose flour plus more for work surface
  • 2 teaspoons kosher salt
  • For filling
  • 1/2 cup pitted Kalamata olives chopped into 1/4-inch pieces
  • 3 tablespoons chopped fresh rosemary
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper

Instructions

  1. For the dough, in a small bowl, combine the yeast, water and oil and let stand for a few minutes until foamy. Pulse the flour and salt together in a food processor. With the motor running, pour in the yeast mixture. Once a shaggy dough forms, let it rest for 10 minutes. Then process the dough for 15 seconds.
  2. Transfer the dough to a lightly floured work surface and fold it onto itself a few times before placing in a lightly oiled bowl. Cover and let the dough rise until it has doubled in size, about 1 hour.
  3. After the dough has risen, pat it into a 10-inch square on a lightly floured work surface. Fold the dough into thirds and transfer it to a floured sheet pan. Unfold it, cover it with plastic wrap and chill in the refrigerator for 1 hour.
  4. For the filling, combine the olives, rosemary, olive oil and pepper in a small bowl. Spread the filling on the bottom half of the dough and fold the other side on top pressing down without stretching the dough.
  5. Use a pizza wheel to cut the dough into 3/4-inch-wide strips. Tie the strips into loose knots and place on a parchment-lined sheet pan leaving 2 inches of space on all sides. Cover the pan with oiled plastic wrap and let rise for 1 hour until they have doubled in size.
  6. Preheat the oven to 400 degrees F. Bake the knots until they are deep golden brown, about 30 minutes. Cool on a wire rack.
  7. Store the rolls loosely covered with plastic on the day they are baked. To defrost frozen rolls, reheat for 5-6 minutes at 350 degrees F and cool before serving.
