Ingredients

  • 8 oz Semi-Sweet Chocolate (baking bars, not chocolate chips), 2 oz finely chopped
  • 16 oz White Chocolate (Ghirardelli baking bars recommended, not chocolate chips), 4 oz finely chopped
  • ¾ teaspoon Peppermint Extract (divided)
  • 2 pinches Maldon Sea Salt (or other fleur de sel)
  • Candy Canes (beaten into a fine powder)
  • Andes Peppermint Chips or Candies (cut up)
  • Mini Pretzels
  • Sweetened Dried Coconut

Instructions

  1. In a microwave-safe bowl, place approximately 6 oz of the semi-sweet chocolate baking bars. Microwave on 50% power in 10-20 second increments, stirring thoroughly after each interval, until the chocolate is ALMOST completely melted. Remove from microwave and stir until the remaining chocolate melts completely. Stir in the remaining 2 oz of finely chopped semi-sweet chocolate. Finally, fold in ¼ teaspoon of peppermint extract and a small pinch of Maldon sea salt.
  2. Spread this dark chocolate mixture into a thin, even layer on a sheet of parchment paper. Aim for a square foot area. For easy handling, I recommend placing your parchment paper on a movable surface like a cutting board or a marble slab. Allow this layer of chocolate to set completely in a cool, dry place before proceeding to the next step.
  3. Repeat the same melting process for the white chocolate as you did for the dark chocolate. Start by melting 12 oz of white chocolate baking bars in the microwave, following the same low-power, incremental heating and stirring method. Once almost melted, stir in the remaining 4 oz of finely chopped white chocolate until smooth. Stir in ½ teaspoon of peppermint extract and another small pinch of Maldon sea salt. You can always start with ¼ teaspoon of extract and add more to taste if you prefer a stronger mint flavor.
  4. Carefully spread the melted white chocolate evenly over the set dark chocolate layer. Work quickly but smoothly to create a beautiful, layered base for your bark.
  5. Immediately after spreading the white chocolate, press in the mini pretzels, ensuring they are partially submerged in the chocolate. Then, generously sprinkle the candy cane powder, Andes peppermint pieces, and sweetened dried coconut over the entire surface, to your heart’s content. Allow the entire bark to set completely in a cool, dry environment until firm. Once fully set, break it into irregular, delicious pieces.
