Ingredients

For the Cupcakes:

  • 1 cup all-purpose flour (1 cup + 2 tablespoons)
  • ½ cup Dutch processed cocoa powder (the highest quality possible)
  • ½ teaspoon espresso powder
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • ½ cup unsalted butter (melted and slightly cooled)
  • 1 ¼ cup sugar
  • 4 large eggs
  • 4 ounces bittersweet chocolate (melted, Ghirardelli 60% recommended)
  • 1 teaspoon vanilla extract
  • 1 cup sour cream (room temperature)

For the Cherry Almond Compote:

  • 3 cups cherries (pitted and quartered; chop smaller if desired)
  • 2/3 cup sugar (adjust to cherry tartness)
  • ¼ teaspoon almond extract

For the Cherry Mascarpone Frosting:

  • 1 cup mascarpone cheese
  • 4 ounces cream cheese (full-fat, not whipped; Philadelphia brand recommended)
  • ½ cup powdered sugar (sifted)
  • 1/3 cup cherry almond compote
  • Heavy cream (as needed, for consistency)

Instructions

To make the Cupcakes:

  1. Preheat the oven to 350°F (175°C). Line two muffin tins with 18 cupcake liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, espresso powder, baking powder, and salt; set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, beat the melted butter and sugar together on high speed until the mixture is thick and well combined. Add the eggs one at a time, beating thoroughly after each addition. Incorporate the vanilla extract with the last egg. Scrape down the sides of the bowl as needed to ensure all ingredients are mixed. Add the melted bittersweet chocolate and mix until fully incorporated.
  4. Reduce the mixer speed to low. Alternately add the dry flour mixture and the sour cream, beginning and ending with the flour. Mix just until the last of the flour has been incorporated, being careful not to overmix. Overmixing can lead to tough cupcakes. Scrape down the sides of the bowl as needed during this process. (Typically, three additions of flour mixture and two of sour cream work well).
  5. Scoop the batter into the prepared muffin tins, filling each liner almost to the top. Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of a cupcake comes out with only a few moist crumbs clinging to it.
  6. After baking, let the cupcakes cool in the muffin tins for 2 minutes before carefully transferring them to a wire rack. Allow them to cool completely before filling or frosting.

To make the Compote:

  1. If you plan to fill the cupcakes with compote or use it in the frosting immediately, begin making the compote as soon as the cupcakes go into the oven. Alternatively, you can prepare it the night before and store it.
  2. Taste your cherries to gauge their tartness. Mine were a balance of tart and sweet, so adjust the sugar quantity accordingly. Combine the sugar and pitted, quartered cherries in a small saucepan and cook over medium heat, stirring occasionally, until the sauce thickens. This may take up to an hour for a thicker consistency. For a quicker thickening, mix 1 teaspoon of cornstarch with a small amount of warm water to create a slurry, then stir it into the compote and continue cooking until thickened.
  3. During the last 15 minutes of cooking, stir in the almond extract.
  4. Allow the compote to cool completely before using it to fill cupcakes or mix into the frosting. It can be stored in an airtight container in the refrigerator overnight.
  5. When ready to fill the cupcakes, use a small paring knife to create a hole in the center of each cooled cupcake. Remove and enjoy the piece of cake, then fill the cavity with your desired amount of cherry almond compote.

To make the Frosting:

  1. Puree the cooled cherry compote (or cherry preserves if substituting) until smooth; set aside.
  2. In a large mixing bowl, using a hand mixer on high speed, beat the mascarpone cheese, cream cheese, and sifted powdered sugar until the mixture is light, smooth, and creamy.
  3. Add the pureed cherry compote or preserves to the cheese mixture. Continue to beat until the cherries are fully incorporated and the frosting is uniformly pink.
  4. If the frosting is too thick, add heavy cream 1 teaspoon at a time, beating after each addition, until the frosting reaches a consistency suitable for piping or spreading.
  5. Pipe or spread the finished frosting generously onto the cooled, filled cupcakes.
  6. Store the frosted cupcakes in the refrigerator. For the best flavor and texture, let them come almost to room temperature before serving.
