The Ultimate Cherry Almond Pound Cake Experience
Welcome to the world of exquisite baking, where every ingredient plays a vital role in creating a culinary masterpiece. Our Cherry Almond Pound Cake stands as a testament to this philosophy, combining classic pound cake traditions with a modern twist of flavors. This recipe has been meticulously crafted to ensure a perfect balance of taste and texture, making it an instant favorite for anyone who appreciates the finer things in life.
The distinctive almond flavor, which forms the heart of this magnificent pound cake, comes from a harmonious blend of both almond flour and almond extract. This dual approach ensures a profound, yet delicately floral, almond essence that permeates every bite. What’s even more captivating is the natural blush of the glaze – believe it or not, there’s no artificial food coloring! It’s a testament to the sheer wonder of nature, brought forth by the rich cherry jam. To achieve that silky-smooth glaze, you’ll want to strain your cherry jam. If you’re feeling ambitious and want to elevate the flavor even further, my homemade cherry preserves would be an incredible addition! For a slightly less intense flavor, tart cherry juice can be substituted for the brandy and jam in the glaze, but we highly recommend sticking to the original for maximum impact.
This almond pound cake boasts a dense, moist, and tender texture, reminiscent of other beloved classics such as our Red Velvet Pound Cake, the festive Mardi Gras King Pound Cake, or The Best Chocolate Pound Cake. It’s a texture that speaks of careful preparation and premium ingredients, promising a satisfyingly rich experience with every forkful.

The Secrets Behind the Perfect Cherry Almond Pound Cake: Mastering the Craft
Crafting a pound cake that truly stands out involves more than just mixing ingredients; it’s about understanding the science and artistry of baking. Here are the crucial elements that elevate this Cherry Almond Pound Cake to perfection:
-
The Indispensable Role of Sour Cream
Sour cream is an unsung hero in many baking recipes, and in this pound cake, its contribution is profound. The extra fat content and relatively low liquid volume in sour cream work synergistically to add depth of flavor, lock in moisture, and create that desirable dense, moist texture. Furthermore, the acidity in sour cream helps to tenderize the gluten strands in the flour, preventing a tough cake and ensuring a melt-in-your-mouth experience. It hydrates the flour just enough while the fat ensures a short, tender crumb. This creates a remarkably tight yet incredibly tender structure, a hallmark of a truly great pound cake. Such is its benefit that we even have a simple sour cream pound cake recipe dedicated to its magic!
-
Butter and Sugar: A Harmonious Balance
The precise ratio of butter to sugar is a cornerstone of this recipe. While intuition might suggest more sugar leads to a lighter cake, our experience shows that a 1:1 butter-to-sugar ratio surprisingly yields a cake that is richer and more tender. Yes, this recipe calls for a substantial amount of sugar, and that is entirely intentional. Beyond its sweetening power, sugar plays a critical role in developing the cake’s flavor profile and contributing to that exquisitely tight crumb which still manages to melt beautifully. It highlights the nuanced almond and cherry notes, ensuring a delightful sweetness without any bitterness. No one wants a bitter cake, especially not a celebratory one!
-
Creamed Just Right: The Art of Mixing
Technically, this Cherry Almond Pound Cake employs the creaming method, but with a specific nuance. The goal is to beat the butter and sugar just until they form a thick, cohesive paste. It is crucial not to over-beat. If you continue beating beyond this point, you risk incorporating too much air between the sugar and fat molecules. While this technique is desired for light, airy cakes and baked goods that require significant leavening, it is contrary to our aim for a dense, luscious pound cake. For this recipe, resist the urge to keep that mixer running. Turn it off as soon as the paste forms; you’ve achieved the perfect consistency for our desired texture. Don’t be over-zealous; you’re doing great!

-
The Delicate Touch of Leavening
When you see only ¼ teaspoon of baking soda, you might wonder if it’s a typo. Rest assured, I never joke about pastries. This seemingly tiny amount is perfectly calculated. Baking soda is an alkaline ingredient that immediately reacts with the acid present in the sour cream. This reaction creates just enough leavening to give the pound cake a slight lift while maintaining its characteristic dense texture and tight crumb that still melts in your mouth. This precision ensures that every aspect of the cake’s structure is intentional, contributing to its overall perfection.
-
Liquids: A Measure of Perfection
In this recipe, the liquids are added with careful consideration – just enough to create a wonderfully silky, thick batter, but never too much. You will marvel at its luscious smoothness as it comes together. Do not be tempted to omit the brandy and almond extract, as they are the primary liquids (and flavor enhancers) in this cake. The brandy not only adds moisture but also a sophisticated depth of flavor that complements the cherries beautifully. If you prefer a non-alcoholic option, water can be used as a substitute for the brandy, though it will subtly alter the flavor profile.
-
Flour That Pan, Peeps: A Crucial Step
Never underestimate the transformative power of a thoroughly greased and floured pan. This step is particularly vital when using a detailed bundt pan like the one I used, where intricate designs demand flawless release. A well-prepared pan ensures that not a single delicious crumb of your cake is left behind. My technique involves adding flour back to the greased pan and tapping it around a second time, ensuring every millimeter of the surface is coated. Then, tap out any excess flour vigorously. This meticulous approach prevents unsightly patches of flour on the exterior of your beautiful cake and guarantees a clean release – a truly satisfying moment for any baker!

-
Patience is a Virtue: Let Your Cherry Almond Pound Cake Cool
This might be the most challenging part of the entire process, but it is undeniably one of the most important: allowing your Cherry Almond Pound Cake to cool properly. I confess to being the queen of impatience, yet I’ve learned through experience that attempting to turn out a bundt cake too soon often leads to disaster, with pieces stubbornly clinging to the pan. For this recipe, I tried a new method: turning the cake out after 20 minutes. I had read that buttered and floured pans benefit from cooling completely before inversion, but nonstick spray and floured pans should be inverted while still warm. The internet did not disappoint! This quick inversion is now my preferred method. However, the crucial second step is allowing the cake to cool completely on a wire rack. Cutting into a pound cake that is still too warm will result in a gloppy, overly dense texture. Trust me on this; the crumb needs time to set, and cutting it prematurely will compress it into an undesirable state. This is the “bad” kind of dense. Just as I wait patiently before slicing into my Easy Chocolate Pie, I extend the same courtesy to this magnificent cake. Your patience will be richly rewarded with a perfect slice every time.

While pound cake, including this exquisite Cherry Almond Pound Cake, might appear straightforward at first glance, it is truly a delicate balance of ingredients and techniques. As I emphasize in my lemon pound cake post, I highly recommend weighing your ingredients for consistent results. The size of eggs can vary, and a cup of flour, when measured by volume, can differ by as much as 50 grams depending on how it’s scooped. If you must measure by volume, please follow this crucial tip: fluff your flour in its bag or container, then gently spoon it into your measuring cup, mounding it at the top. Use a straight edge, like a knife, to level off the excess, but whatever you do, do not tap or compress the flour in the cup. Remember, too much flour is the enemy of a moist, flavorful cake, leading to a dry and crumbly result. That concludes today’s baking wisdom!
Serving and Storage Suggestions
Once your Cherry Almond Pound Cake has fully cooled and been lovingly glazed, it’s ready to be savored. Serve slices with a dollop of fresh whipped cream, a side of macerated fresh cherries, or simply on its own with a cup of coffee or tea. The rich almond flavor and vibrant cherry notes make it a delightful dessert for any occasion, from casual family gatherings to elegant dinner parties.
To store any leftover pound cake, ensure it is completely cool. Wrap it tightly in plastic wrap or aluminum foil, or place it in an airtight container. It will stay fresh at room temperature for up to 3-4 days. For longer storage, slices can be individually wrapped and frozen for up to 2-3 months. Thaw in the refrigerator overnight or at room temperature for a few hours before serving. Re-glaze if desired after thawing for that fresh-baked look and taste.
Explore More Pound Cake Variations
The beauty of a classic pound cake lies in its versatility. While the Cherry Almond Pound Cake is undeniably a star, don’t hesitate to experiment with different flavor combinations to suit your palate. Instead of cherry jam, consider a raspberry or apricot jam for a different fruit profile. If brandy isn’t your preference, an almond liqueur or even cherry juice concentrate could be used in the glaze, adjusting for consistency. For those who adore nuts, a sprinkling of toasted slivered almonds on top of the glaze would add an extra layer of crunch and flavor. The possibilities are endless, making pound cake a canvas for culinary creativity.

Ingredients
For the Cake:
- 1 cup Butter
- 2 ¼ cups Sugar
- 4 Eggs
- 1 ½ teaspoons Almond Extract
- ⅔ cup Sour Cream
- 2 ½ tablespoons Brandy
- ¾ teaspoon Kosher salt
- ¼ teaspoon Baking soda
- 2 ¼ cups All Purpose Flour
- 1 ¾ cups Almond Flour
For the Glaze:
- 1 cup Confectioners Sugar
- ¼ cup Cherry Jam strained (or my Cherry Preserves!)
- 3 tablespoons Brandy approximate
Homemade Recipe to take it to the next level:
Cherry Preserves
Instructions
-
Preheat oven to 325°F convection.
-
Prep your Pan: Spray your pan with cooking spray and then flour it. Tap the flour around until every inch is covered. Tap out the extra flour onto a piece of parchment on the counter. You should be left with a perfectly floured pan.
-
Whisk together flour, almond flour, salt and baking soda. Set aside.
-
Whisk together the sour cream and brandy.
-
In the bowl of a stand mixer fitted with the paddle attachment, beat butter and sugar just until a thick paste forms. Beat in the eggs one at a time, scraping down the sides of the bowl after every two eggs or so. Add the almond extract with the last egg.
-
Switch the mixer to low and then alternately add the flour and sour cream mixture. Don’t wait until all the flour has incorporated until you add the next batch. Just keep adding with two hands. Pro-style. Stop the mixer to add the last of the sour cream mixture and scrape it all out with a rubber spatula.
-
You should have a silky, smooth batter.
-
Pour into prepared pan and smooth the top.
-
Bake in preheated oven until a cake tester comes out with a few clinging crumbs. This will take about 60-85 minutes depending on your oven. Mine baked for 70 minutes. If you overbake it will be dry. Even that much butter, sugar and sour cream can’t over compensate for overbaking.
-
Let it COOL for 20 minutes, then loosen the edges with a paring knife and turn it out onto a rack. Allow to cool completely.
-
Dust with powdered sugar, drown in glaze or just slice it right up!
To Make the Glaze
-
Whisk the jam and brandy into the confectioner’s sugar until it flows freely from the whisk. Add more brandy to thin it out or, if you get a little heavy handed with the booze, then just add more sugar until the perfect consistency is achieved.
