The Secret to Unforgettable Chocolate: Quadruple the Delight
What makes these cookies so extraordinarily good? It’s all in the name: Quadruple Chocolate. We don’t just stop at one or two forms of chocolate; we layer four distinct types to create a symphony of chocolatey goodness that is complex, deep, and utterly satisfying. Each element plays a crucial role in achieving the perfect balance of flavor and texture.
First, we start with high-quality **bittersweet chocolate chips**. These morsels provide bursts of intense chocolate flavor and a delightful texture, melting slightly when warm and offering a pleasant bite when cooled. Using a brand like Ghirardelli ensures a superior chocolate experience.
Next, a generous amount of **melted semi-sweet chocolate** is incorporated directly into the dough. This creates a foundational richness, ensuring that every part of the cookie is infused with authentic chocolate flavor and contributing to that coveted fudgy texture.
Then comes the magic touch: **instant chocolate pudding mix**. This isn’t just for flavor; it’s a game-changer for texture, making the cookies incredibly moist, thick, and wonderfully chewy. We recommend a “Special Dark” variety, like Hershey’s, to further enhance the deep cocoa notes.
Finally, **unsweetened cocoa powder** rounds out the chocolate quartet. This dry ingredient intensifies the chocolate flavor without adding extra sweetness, providing a beautiful dark color and a slightly earthy depth that complements the other chocolate elements perfectly. Together with the pudding mix and brown sugar, these ingredients push the cookies “over the edge into Chocoholic’s Heaven!”

The Pudding Cookie Phenomenon: Why It Works
You might recall “pudding cookies” gaining significant buzz around 2014, and for good reason! The addition of instant pudding mix to cookie dough is a brilliant hack for achieving an unparalleled level of moisture, thickness, and chewiness. This isn’t just a fleeting trend; it’s a baking revelation.
The cornstarch in instant pudding mix helps to absorb moisture in the dough, preventing the cookies from spreading too much while baking. This results in those coveted thick, soft, and substantial cookies that hold their shape beautifully. It also contributes to an incredibly tender crumb and keeps the cookies fresh for longer, ensuring every bite is as delightful as the first. Once you bake with pudding mix, you might find yourself exploring all sorts of flavors for cookies, bars, and even cakes!

Baking the Perfect Batch: Tips for Success
Achieving these ultimate chocolate pudding cookies is simpler than you might think, especially with a few helpful tips:
- Quality Ingredients Matter: Since chocolate is the star, opt for good quality bittersweet and semi-sweet chocolates. Fresh unsalted butter and large eggs also make a difference.
- Proper Chilling is Key: While it might test your patience, refrigerating the cookie dough for at least 3 hours, or even overnight, is crucial for the thickest, chewiest results. This allows the ingredients to fully hydrate and prevents the cookies from spreading excessively in the oven. Even without chilling, the cookies are good, but a chilled dough transforms them into something truly spectacular.
- Don’t Overmix: When adding the flour mixture, mix just until combined. Overmixing can develop the gluten too much, leading to tougher cookies.
- Perfect Bake, Imperfect Look: These cookies are baked for a relatively short time (around 12 minutes). They might still look slightly glossy in the middle and not completely “done” when you pull them out. This is exactly what you want! They will continue to set and firm up as they cool, resulting in that perfectly soft and fudgy center.
- Cooling is Crucial: Allow the cookies to cool for at least 10 minutes on the baking sheet before transferring them to a wire rack. This helps them retain their shape and prevents them from falling apart. If you bite into one too early, it will be a delicious, gooey mess, but patient cooling will give you that ideal texture.

Freezing for Future Indulgence
One of the best things about this recipe is how beautifully the cookie dough freezes. You can easily prepare a double batch and save half for later. Simply roll the chilled dough into balls, place them in a single layer on a parchment-lined baking sheet to freeze solid, then transfer them to a plastic, zip-top bag for long-term storage in the freezer. When a chocolate craving strikes, simply bake them directly from frozen, adding about 3 minutes to the baking time. Some even argue that baking them from frozen yields an even better texture, so it’s definitely worth a try!

Ingredients
- 4 ounces semi-sweet chocolate melted and cooled
- 1 cup unsalted butter softened
- 1 cup light brown sugar lightly packed
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 3.5 oz box instant chocolate pudding mix {I used Hershey’s Special Dark}
- ¼ cup unsweetened cocoa powder
- ½ teaspoon coarse sea salt
- ⅔ cup bittersweet chocolate chips
Instructions
-
Whisk together flour, baking powder, pudding mix, cocoa powder, and salt in a medium bowl and set aside.
-
In the bowl of a stand mixer fitted with the paddle attachment, add butter and sugar. Beat on medium-high speed until light and fluffy.
-
Add the eggs and vanilla, beat to combine. {The mixture may look curdled at this point, which is fine.}
-
Reduce the mixer speed to low and slowly add the flour mixture in several additions, mixing just until combined after each addition. Stop several times to scrape down the sides of the bowl. I did 7 total additions.
-
With the mixer running, slowly pour in the melted chocolate; mix until combined. Stir in the chocolate chips.
-
Refrigerate 3 hours or overnight for the thickest, chewiest cookies. I baked several without chilling, because I am impatient, and they were still thick with a fabulous texture, but they improved greatly after some refrigeration.
-
Preheat oven to 350° and line two baking sheets with parchment paper.
-
Roll into balls approximately the size of ping-pong balls, place 2 inches apart on parchment lined cookie sheets, press down slightly to flatten top.
-
Bake 12 minutes in pre-heated oven. The tops should still be glossy in the middle. They won’t look “done”. Allow to cool 10 minutes on cookie sheet and then move to a wire rack to cool completely. The cookies will firm up as they cool. If you break one open while it is warm, it will be a mess. A delicious mess.
Notes
This cookie dough freezes beautifully! Simply roll the chilled dough into balls, freeze in a plastic, zip-top bag, and bake as directed {add in ~3 minutes} whenever a craving strikes! They might be even better baked from frozen. Just sayin’.
