Ingredients  

Chipotle Chorizo Tacos:

  • 1 cup yellow onion diced
  • 2 tablespoons garlic cloves minced
  • 2 tablespoons olive oil
  • 3 chipotle chilis in adobo sauce minced
  • 2 teaspoons spice mix
  • 1 lb ground turkey
  • 3 chorizo sausages uncooked, casings removed (~3/5 lb)
  • ½ cup water or chicken broth
  • 2 teaspoons adobo sauce
  • 2 tablespoons tomato paste
  • Kosher salt to taste

Spice Mix for Tacos:

  • ¼ teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 teaspoon chili powder
  • 1 teaspoon ancho chili powder
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground cumin

Mezcal Salad:

  • 2 radish thinly sliced
  • 1 small shallot thinly sliced
  • ½ cup green cabbage thinly sliced
  • 1 tablespoon cilantro
  • ¼ teaspoon sugar
  • 1 tablespoon Mezcal something good enough to drink!
  • 1 ½ teaspoons fresh lime juice
  • 1 teaspoon olive oil
  • salt & pepper

Sweet Potato Tortillas:

  • 2 cups masa harina 250g
  • ½ teaspoon kosher salt
  • ½ cup sweet potatoes cooked (I used a microwave), passed through a ricer, still warm (125g)
  • 1 ¼ cups warm water

Instructions 

To Make Sweet Potato Tortillas:

  • In a medium bowl, combine the masa harina, salt, cooked and riced sweet potatoes, and 1 cup of the warm water. Use the back of a wooden spoon to thoroughly mash and smear all the ingredients against the side of the bowl. This action helps to evenly distribute the sweet potatoes and create a perfectly homogenous mixture.
  • Gradually add the remaining ¼ cup of warm water. Use your hands to knead the mixture for about 2 minutes until a smooth, pliable dough forms. If the dough feels too dry, add warm water one teaspoon at a time until the desired consistency is reached. If it becomes too sticky, a small amount of extra masa harina can be incorporated, or simply continue kneading to see if it firms up.
  • Divide the dough into 18 equal rounds, each weighing approximately 33 grams (1.2 oz) – roughly the size of a golf ball. It’s crucial to keep these dough balls covered with a damp cloth at all times to prevent them from drying out.
  • Prepare your tortilla press by cutting one side and the bottom edge of a ziptop baggie. This allows it to open like a book, creating a non-stick surface for pressing the tortillas.
  • Preheat a griddle or a large cast-iron pan over medium heat. Consistent medium heat is key for even cooking.
  • Place one dough ball inside the prepared baggie on the tortilla press. Press firmly to flatten the dough into a tortilla, aiming for about 1/8th inch thickness. You may need to experiment with the amount of pressure and dough placement to achieve perfect, uniformly thin tortillas. While a rolling pin can be used, a tortilla press will yield more consistently round and thin results.
  • Carefully transfer the pressed tortilla to the preheated skillet. Cook until it easily releases from the pan, then flip and cook for another 30 seconds on the second side. Continue cooking in 30-second increments, flipping as needed, until the tortilla puffs up and is cooked through, usually taking about 4 minutes in total. Immediately transfer the cooked, warm tortillas into a clean kitchen towel and keep them covered to retain warmth and softness.
  • Repeat the process with the remaining dough balls. You can either press all the tortillas first, separating them with plastic wrap, or press them one by one as you cook.
  • Once all tortillas are cooked, serve them warm immediately. Leftover tortillas can be stored in a ziptop plastic baggie in the refrigerator and easily reheated in the microwave for later enjoyment.

To Make Taco Filling:

  • In a large sauté pan or cast iron skillet, heat approximately 2 tablespoons of olive oil over medium heat. Add the diced yellow onions and minced garlic, gently cooking until the onions become translucent and begin to caramelize slightly. Stir in the minced chipotle chilis in adobo sauce and the 2 teaspoons of spice mix, cooking for another 30 seconds while stirring constantly to release their aromatic flavors.
  • Add the ground turkey and chorizo (casings removed) to the pan. Break up the meats with a spoon and cook thoroughly until browned. Pour in the water or chicken broth, adobo sauce, and tomato paste. Continue to cook, stirring occasionally, until the liquid has reduced and the filling has thickened to a rich, saucy consistency. Taste and adjust seasoning with kosher salt as needed.

Dress the Mezcal Radish salad:

  • In a medium bowl, combine the thinly sliced radishes, small shallot, green cabbage, and fresh cilantro. In a separate small bowl, whisk together the mezcal, sugar, fresh lime juice, olive oil, a pinch of kosher salt, and a pinch of fresh black pepper to create the dressing. Pour the dressing over the vegetables and toss to coat thoroughly. Make sure to break apart any radishes that may have stuck together after slicing, ensuring an even distribution of flavor.
  • If you prepared the radishes and shallots ahead of time and stored them in water, remember to blot them dry with a paper towel before dressing. Soaking them in water not only keeps them crisp but also gently mellows their characteristic “bite,” resulting in a more balanced flavor for the slaw.

The day before serving, I like to juice my limes (for both the salad dressing and any accompanying guacamole), prepare the taco filling, mince onions for both the filling and guacamole, chop cilantro, make and store the sweet potato tortillas, and thinly slice the radishes, shallots, and cabbage using a microplane. Store the sliced radishes and shallots in separate containers with cold water, and keep the chopped cilantro in a ziptop baggie. On the day of serving, simply make the guacamole (a quick 5 minutes), dress the salad (just 2 minutes), and warm the taco filling and tortillas in the microwave. This advanced preparation ensures a stress-free and enjoyable meal experience.

While you could use store-bought corn tortillas, I wholeheartedly recommend the homemade sweet potato tortillas. Their subtle sweetness beautifully complements the corn flavor and perfectly tempers the spiciness of the chorizo, adding a unique and delightful dimension to these tacos.
