Instructions

  1. In a large, heavy-bottomed saucepan, combine the whole milk, Arborio rice, a pinch of kosher salt, and the split vanilla bean. Stir thoroughly to ensure all ingredients are well mixed. (If you’re opting for vanilla extract, do not add it at this stage.) Bring the mixture to a boil over high heat, remembering to stir constantly to prevent scorching.
  2. Once boiling, reduce the heat to low. Cover the saucepan and allow the pudding to simmer gently for approximately 15 minutes. During this time, stir occasionally to prevent the rice from sticking to the bottom.
  3. While the rice pudding is simmering, prepare your egg mixture. In a separate medium bowl, whisk together the two large egg yolks and granulated sugar. If using vanilla extract instead of a bean, incorporate it into this mixture now. Whisk until the egg yolks and sugar are fully integrated and the mixture is smooth. Set this aside.
  4. Uncover the saucepan and continue to simmer the pudding, stirring frequently. The goal is to cook until the rice grains are tender and the pudding has visibly thickened. Be vigilant and avoid boiling the rice at this stage. As the pudding thickens, stir almost constantly towards the end of cooking to prevent the milk from burning and sticking to the bottom of the pan.   5. Now it’s time to temper the egg mixture. Slowly, in a thin stream, add about half a cup of the hot cooked rice pudding mixture to the egg-sugar mixture in the bowl, whisking vigorously and constantly. This crucial step gradually raises the temperature of the eggs without scrambling them. Once tempered, return the entire egg-rice mixture back into the saucepan with the remaining pudding. Continue to cook over low heat, stirring continuously, until the mixture is beautifully thick and coats the back of a spoon, which typically takes about 5 minutes.
  6. Promptly remove the saucepan from the heat to prevent further cooking. Transfer the hot rice pudding into your chosen serving dish or a storage container. To prevent a “skin” from forming on top as it cools, cut a piece of parchment paper or plastic wrap and press it directly onto the entire surface of the pudding. Once covered, refrigerate until thoroughly chilled.
